Shirred Eggs with Kale

What the heck are shirred egg anyway?

In case you are wondering what shirred egg are, well, they are eggs baked in either cream or butter (or both) in a small ramekin until the whites are firm and the yolks are runny.

Ever wonder what it would be like to go out and gather your own fresh eggs every morning. I remember as a kid going to my grandfather’s sister’s house where my mother and grandmother would buy their fresh milk, butter and eggs and my sister and I would go out into the hen house and gather a few eggs. I don’t remember lifting the chickens up and I’m sure we would have just shooed them off their nest to get to the eggs.

When we were back home a few weeks ago, a friend was telling me about her granddaughter, Hannah’s, interest in raising chickens. She has names for all her chickens and she actually sells their eggs to local residents. Yesterday was a cool (already warming up a little here in Texas), rainy day. My husband had laid out some smoked jalapeno venison sausage that our neighbor had given us. I get tired of making him scrambled eggs every morning, so I decided to try something new. I found this recipe for Shirred Eggs and I had some leftover sauteed kale from dinner the night before so decided to combine the two for a breakfast treat. The sausage was hot and spicy and was great with this new egg recipe.

Next time you wake up to a gloomy, rainy or snowy day, try something new. You can throw anything into the bottom of your ramekin, ham, sausage, bacon, zucchini, bell peppers, or tomatoes. I can’t wait for my next experiment.

Put a little melted butter in the bottom of ramekin, top with some of your cooked kale (or spinach), top with two eggs, cream and cheese.

Dig in and you will get a fork or spoon full of kale, egg, cream and cheese, yummy and filling.

Shirred Eggs with Kale


  • 4 eggs
  • 3 tsp. melted butter
  • 4 Tbsp. heavy cream
  • 1/4 c. cooked kale or spinach
  • 1/4 cup shredded cheddar cheese or another other type
  • salt and pepper to taste


  1. For two ramekins put 1 1/2 teaspoons of melted butter into each cup. Top with 1/2 of the cooked kale/spinach. Carefully crack two eggs into each of the cups. Pour two tablespoons of the heavy cream into each dish. Salt and pepper to taste and top with some of the cheddar cheese.
  2. Bake in 350° oven for 10-15 minutes. Mine took around 15-20 minutes for the whites to cook.
