Yesterday was a cool (already warming up a little here in Texas), rainy day. My husband had laid out some smoked jalapeno venison sausage that our neighbor had given us. I get tired of making him scrambled eggs every morning, so I decided to try something new. I found this recipe for Shirred Eggs and I had some leftover sauteed kale from dinner the night before so decided to combine the two for a breakfast treat. The sausage was hot and spicy and was great with this new egg recipe.

Put a little melted butter in the bottom of ramekin, top with some of your cooked kale (or spinach), top with two eggs, cream and cheese.

Shirred Eggs with Kale

Ingredients

  • 4 eggs
  • 3 tsp. melted butter
  • 4 Tbsp. heavy cream
  • 1/4 c. cooked kale or spinach
  • 1/4 cup shredded cheddar cheese or another other type
  • salt and pepper to taste

Instructions

  1. For two ramekins put 1 1/2 teaspoons of melted butter into each cup. Top with 1/2 of the cooked kale/spinach. Carefully crack two eggs into each of the cups. Pour two tablespoons of the heavy cream into each dish. Salt and pepper to taste and top with some of the cheddar cheese.
  2. Bake in 350° oven for 10-15 minutes. Mine took around 15-20 minutes for the whites to cook.
