No feta with this watermelon!
Over the last umpteen years I’ve seen so many, like kazillion, watermelon and feta cheese recipes. I’ve never really been a feta cheese fan so why not trade out some good blue cheese; a little more tasty I think.
I would love to have watermelon growing out on our property but we haven’t really started planning where a garden will be. We have so much sun now we could put it anywhere. So, when I can buy a good watermelon in the middle of summer I buy it knowing that it will probably be really juicy and bright red on the inside.
I love arugula and I think it goes great with the watermelon. I always salt my watermelon when I eat it to bring out the sweetness (that’s what I tell myself) but I think the arugula will do the same thing for this melon. A little spinach and almonds (pistachios) can’t hurt either tied all together with a white balsamic dressing. (I could not find my almonds in my freezer so I substituted pistachio nuts which were great.)

BLASTS FROM THE PAST: Speaking of watermelon, these Watermelon Cookies (no watermelon in recipe) are a perfect little cookie for the summer.
I changed the nut from almond to pistachio. (I couldn’t make the change in below recipe though??)
Mix your arugula and baby spinach in salad bowl. Remove any long stems from the spinach.
I added the onions to the bowl but then put the blue cheese and pistachios in separate containers until I was ready to dress the salad for dinner.
When ready to serve add the watermelon that you have cut in about 1/2″ cubes.
Top with pistachios and then the blue cheese crumbles. (The recipe says almonds but you can add whatever nut you want.)
Ready for the dressing.
The flavor combos of the arugula and watermelon along with the blue cheese makes this a salad that would go well with just about anything you might be preparing for dinner.
Arugula Spinach Watermelon Salad
Ingredients
- 2 c. watermelon cut in bite size pieces
- 2 c. baby arugula
- 2 c. baby spinach
- 1 shallot sliced thin or use red onion or green onion
- 1/2 c. crumbled blue cheese
- 1 c. almonds toasted
- Dressing:
- 3 Tbsp. olive oil
- 1 Tbsp. white balsamic
- 1/2 tsp. salt
- 1/4-1/2 tsp. black pepper
Instructions
- For the dressing whisk all ingredients together and refrigerate until ready to serve.
- In a large salad bowl mix your arugula, spinach, and watermelon. Add in your shallot (or red or green onion), toasted almonds and enough dressing to lightly coat salad. Sprinkle with blue cheese and serve immediately.
Recipe Notes
You can have all the ingredients in the salad bowl refrigerated and add dressing right before serving.
