Arugula Spinach Watermelon Salad

Ingredients

  • 2 c. watermelon cut in bite size pieces
  • 2 c. baby arugula
  • 2 c. baby spinach
  • 1 shallot sliced thin or use red onion or green onion
  • 1/2 c. crumbled blue cheese
  • 1 c. almonds toasted
  • Dressing:
  • 3 Tbsp. olive oil
  • 1 Tbsp. white balsamic
  • 1/2 tsp. salt
  • 1/4-1/2 tsp. black pepper

Instructions

  1. For the dressing whisk all ingredients together and refrigerate until ready to serve.
  2. In a large salad bowl mix your arugula, spinach, and watermelon. Add in your shallot (or red or green onion), toasted almonds and enough dressing to lightly coat salad. Sprinkle with blue cheese and serve immediately.

Recipe Notes

You can have all the ingredients in the salad bowl refrigerated and add dressing right before serving.
