1shallotsliced thin or use red onion or green onion
1/2c.crumbled blue cheese
1c.almondstoasted
Dressing:
3Tbsp.olive oil
1Tbsp.white balsamic
1/2tsp.salt
1/4-1/2tsp.black pepper
Instructions
For the dressing whisk all ingredients together and refrigerate until ready to serve.
In a large salad bowl mix your arugula, spinach, and watermelon. Add in your shallot (or red or green onion), toasted almonds and enough dressing to lightly coat salad. Sprinkle with blue cheese and serve immediately.

You can have all the ingredients in the salad bowl refrigerated and add dressing right before serving.
