Peanut Zucchini and Cucumber Spiralized Salad

Isn’t this a beautiful spiralized salad.

Wow, my blog caught up with me. I had this salad ready to post but had not written anything about it. We had an earlier than I thought trip to Austin to welcome our new grandson (#6). Our daughter was in labor all of about 30 minutes before delivering little Frankie. He’s just the cutest thing.

Then we had a trip to Missouri to check on my mother-in-law and spent a week there, all the time I never looked back at my post to see what was coming up.

So, here’s my newest salad using my spiralizer. I kind of put the device back in my closet and forgot about it until one weekend we had friends over and I thought how good a refreshing salad would be made with cucumbers and zucchini.

BLAST FROM THE PAST: This Bar-B-Q Shrimp is so delicious and you really want to buy “heads on” shrimp. If you can’t find it then at least buy shrimp with the shells on. The liquid part of this appetizer or entree is great sopped up with some good French bread.


Use your spiralizer* and make zucchini and cucumber noodles. I used my mandolin to cut the red onion and red pepper into very thin strips.


Add in the cilantro, chopped or left whole.


Ingredients for the dressing. Whisk the dressing ingredients together and refrigerate until ready to toss the salad.


Toss the noodle salad with just enough of the dressing to coat. Top with chopped peanuts (or pinenuts).



Peanut Zucchini and Cucumber Spiralized Salad

  1. 1 large zucchini, spiralized
  2. 1 English cucumber, spiralized, or regular cucumber
  3. 1 red bell pepper, cut into toothpick size strips
  4. 1/2 c. cilantro, chopped
  5. 1/2 c. peanuts, or pinenuts
  6. 1/2 c. very thinly sliced red onion
  7. Dressing
  8. 2 tsp. honey
  9. 1 Tbsp. soy sauce
  10. 1/2 tsp. chili oil
  11. 2 tsp. rice vinegar
  12. 1 Tbsp. sesame oil
  13. juice of one lime, optional
  1. Use a spiralizer*and cut your zucchini and cucumber into long spirals. I used a mandolin to cut the red pepper and red bell pepper into very thin strips.
  2. Put the noodles, red bell pepper, onion, cilantro into a bowl. Cover until ready to add dressing.
  3. For the dressing mix all dressing ingredients together with a whisk. Taste and if you want it a little more tart, then add in the lime juice. Set aside.
  4. About 30-45 minutes before serving, toss the noodle salad ingredients with enough dressing to coat. Top with chopped peanuts and serve.
  1. *If you don't have a spiralizer then you could use a mandolin or a julienne tool to make long strips.
