White Chocolate Raspberry Bars

Just in time for Valentine’s day.

Do you ever wonder how the first bar dessert was made? Maybe someone just got tired of making all those individual cookies and just pressed the dough into a pan and baked it and abracadabra a new dessert.

Well, this dessert came from my daughter; and the recipe came from a co-worker years ago. When I use to cater I could make this, cut into tiny little 1″-1 1/2″ squares (because it is so rich) and freeze and then pull out day of the party to thaw.

This is a great little “bite” to have in your freezer to serve to those friends that pop in for coffee or a cocktail in the afternoon.

Coconut Chocolate Raspberry Squares

Nestles makes the very best choco-late.

For about 20 years after moving to Texas I catered; I had my first job about a month after moving here for our realtor, then our builder and then for a corporation and after that things picked up and I was most doing corporate work except at Christmas time where I was booked mostly for cocktail parties and I also did showers, weddings, and graduation parties. My favorite party to cater, by far, was a cocktail party because I love little food. It’s a lot more work doing all those little pieces of food but I have always loved to watch people try a lot of different items which you get with that type of party vs a dinner party.

When catering corporate luncheons I had to come up with different recipes for cookies/bars/finger desserts. I could whip up a batch of chocolate chip cookies or brownies without even looking at a recipe because I did them so often. I can no longer do that since it has been about 6 years since I have catered anything. That part of my life is in the rear view mirror and was the reason I started food blogging; I missed cooking the food and sharing with others.

When my kids were younger, chocolate chip cookies were their most requested cookie for me to make. One year at one of the school book sales I bought this Nestles book and over the next few years of catering (like 20) I made several favorites from that book.

Raspberry Cheese Pie

Hurry up November! I want a piece of this pie.

I can’t wait for my daughter’s wedding this weekend; the last of my three kids to get married and the only daughter. I have dreamed of this day for years maybe even since the day she first made her appearance on this earth.

I remember as a kid having dolls and my favorite doll, I think, was my Bride’s doll. All decked out in her long dress and veil. I just loved playing with her. Now, watching my daughter plan her wedding (and believe me, she has done most of the work), all I can think about is what shouldn’t be going into my mouth. I have been trying to be good over the last several months, giving up desserts and wine and a lot of other things.

Other than dreaming about the wedding, my other dreams are consumed with what I’m going to EAT after the wedding. I’m making a list of things I really want. Top of my list is a burger on a real bun covered with cheese, chicken gizzards next on the list, maybe a doughnut or two (one usually makes me sick), and then of course there’s dessert. So, I may take a bite of this pie just so I can experience the berry goodness, but once the wedding is over, I’m having a whole piece. Maybe I will take a whole day and just eat everything I want and get it over with.

Eton Mess

Most unusual name for a delicious and royal dessert.

When I first heard someone talking about this dessert, I thought I heard “eaten mess”. Of course this wasn’t right and I’m just getting over an ear infection and thought my hearing was going for sure. So, I started a search. I googled (what would we do without google?) “eaten mess” and came up with Eton Mess. A dessert fit for the Royals.

Last week I got so caught up in the wedding of Kate and William.  When all of this started with the engagement several months ago, I really didn’t think I would be watching with enthusiasm every little news sniblet that hit the TV.  But, I was wrong and it wasn’t long before I was watching every movie and program that came on about Princess Di to what the dress, cake and food might be like for Kate and William’s wedding. And, yes, I did get up at 3:00 a.m. last Friday to start watching all the coverage.

What little girl doesn’t love Cinderella and the fairy tale ending. I loved The Officer and a Gentleman where Richard Gere rushed in at the end of the movie and swept up the fair maiden and off they go into the sunset. I love happy endings and if I don’t like the way a movie ends, I rewrite it in my mind to end the way I want to see the final scenes.

Eton Mess is an English dessert that starts with torn meringue cookies mixed with whipped cream and strawberries and layered with a raspberry sauce. This dessert is traditionally served at Eton College’s annual cricket game against Winchester College.  The dish has been known by this name since the 19th century. You can use any type summer fruit but the strawberry is the traditional way of preparing this light and summery dessert. I added the raspberry sauce to the layers. Good twist.

I’m serving mine in my vintage champagne glasses I got when we were married  42 years ago. I guess that makes me vintage, or almost. I love the bowl type champagne glasses for drinking champagne, serving desserts or even using as a small table decorations holding a little fern and a few flowers.
