When she was young she had scarlet fever and lost all of her hair and when it came back in it was jet black. And that’s the way I remember her most of my life until she turned silver. Butter Scrumptious Coffee Cake

Ingredients

  • Topping:
  • 1/4 c. butter
  • 1/2 c. flour
  • 1/2 c. brown sugar
  • 1 c. chopped pecans
  • Cake:
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 stick butter
  • 1/2 c. milk
  • 8 oz. cream cheese
  • 1 1/4 c. sugar
  • 1/2 tsp baking soda
  • 1 tsp. vanilla extract

Instructions

  1. For the topping, cut the 1/4 cup butter into the flour and brown sugar until you have small pea size mixture. Add in the chopped pecans.
  2. For cake. Put the butter and cream cheese in bowl of electric mixer and beat to combine. Slowly add in the 1 1/4 cup sugar and then the eggs. Beat until well blended. Add in the vanilla extract and all the dry ingredients alternately with the 1/2 cup of milk. Blend well.
  3. Pour the batter into a greased and floured 13 x 9" pan. Sprinkle with the prepared topping and bake at 350° for 35-40 minutes or toothpick inserted in center comes out clan.

After the cream cheese and butter are blended, and before added the sugar? Or after the dry ingredients and milk? Sad to say that by the time I remembered it from my youth, and sought the recipe, Mom had come down with Altzheimers and my sister and I could never figure it out.
