Ingredients
  1. 2 c. spinach leaves
  2. 5-6+ ears of canned baby corn, sliced thinly into little flowers (see note)
  3. 4 c. good quality chicken stock
  4. 2 Tbsp. cornstarch
  5. 1 tsp. ground ginger
  6. 1/4 tsp. garlic powder
  7. 2 large eggs
  8. 2 egg whites
  9. 1/2 tsp. sesame oil
  10. thinly sliced green onion for garnish
  11. salt to taste (about 1 teaspoon)
  12. black (or white) pepper to taste (about 1/4 teaspoon)
Instructions
  1. Slice the baby corn into thin slices. They will look like tiny flowers.
  2. Stack several stemmed spinach leaves and roll up in a chiffonade and slice into thin strips. Set aside.
  3. Whisk together chicken stock (chilled or room-temperature), cornstarch, ginger and garlic powder in a medium saucepan until combined and no lumps remain. Heat over high heat until boiling, stirring occasionally.
  4. Meanwhile, whisk together the eggs and egg whites in a small measuring cup or bowl. (I find the measuring cup easier for pouring.)
  5. Once the broth reaches a boil, remove from heat. Then use a fork or whisk to stir the broth in a circular motion, while slowly pour the whisked eggs into the soup to create egg ribbons. Stir in the sesame oil, green onions and corn (optional) until combined. Season with salt and pepper to taste, also adding a dash or two of more sesame oil if you'd like more of that flavor.
  6. Serve immediately, topped with additional green onions for garnish.
Notes
  1. The French term chiffonade means "made of rags." In cooking, chiffonade is a technique for slicing herbs and leafy vegetables into long, thin strips. This method is useful for cooking tougher greens like kale and chard, which can be hard to chew when left in bigger pieces. It's also a nice way to slice up herbs like mint or basil to scatter over a dish or add to a salad.
  2. To chiffonade something, stack and roll a small pile of leaves and then slice (or snip) them into thin ribbons.
  3. NOTES ON CARROT FLOWER-- my big mistake was putting them in a bowl with a little water and nuking them. they almost totally dried up by the time I was going to pop them in the soup. Blanching will be a lot better method.
