I got ahead of myself and threw the bacon in with the onions thinking it would brown and it never did. Drain the bacon on paper towel and reserve it until the end.

Ingredients
  1. 1/2 lb. bacon
  2. 1 large onion, chopped (about 2 cups)
  3. 2 bell peppers, coarsely chopped
  4. 3-4 jalapeños, chopped
  5. 4 cloves garlic, minced
  6. 27 oz. can kidney beans, drained, rinsed
  7. 27 oz. can pinto beans, drained, rinsed
  8. 27 oz. can black beans, drained, rinsed
  9. 1 carton cherry tomatoes, halved (or 2 large tomatoes, cubed
  10. 1-15 oz. can beef broth
  11. 2 fresh bay leaves (or dried)
  12. 1 1/2 tsp. ground cumin
  13. 2 tsp. chili powder
  14. 1 tsp. salt
  15. 1 tsp. black pepper
  16. fresh cilantro for garnishing
  17. 2 Tbsp. fresh oregano (or 2 tsp. dried)
  18. 1 bottle dark beer
  19. 2 Tbsp. brown sugar
Instructions
  1. Chop the bacon and put in pot and cook until all the fat has rendered out and the bacon is brown. Remove bacon to drain on paper towels. Crumble and set aside until end of cooking time.
  2. Put the chopped onion, garlic, tomatoes, bell pepper and jalapeño in the fat and sauté for 5-6 minutes until the onions are translucent.
  3. Drain and rinse all the beans and add to the pot along with the broth, spices, brown sugar and beer. Simmer for 1-2 hours (or longer). Add in the crumbled bacon and cilantro about 30 minutes before serving.
  4. Enjoy.
Notes
  1. You can add any type of bean you want. If you need more liquid add either another beer or more beef broth.
