In less than 24 hours we will be at Beaches Resort in Turks and Caicos celebrating our 50th anniversary with kids and 6 grandsons. There’ll  be 14 of us and I’ve been accumulating so much stuff that I probably won’t need. Poor little guy was pretty unhappy that night but by the next day sporting a neon green cast he looked like he was ready to jump in a pool. Well, maybe by the time they get there. Hoping to see a waterproof cast by then, if not, then he’ll have something to put over the cast so he can join his cousins doing everything (maybe almost everything) at the beach and at one of the 8 pools. 

Maybe the macaroni and cheese food truck that is parked inside by the Pirates waterpark will help or all the ice cream or cotton candy he can eat in a day will make Charlie feel a little bit better. This Beaches has everything onsite – waterpark, wave pool, lazy river, Sesame St. characters, shows, food trucks, 21 restaurants and the list goes on and on. Hard to imagine the kids won’t stay busy exploring everything.

These bananas were laying around getting darker by the day land I know Charlie loves sweets and I though if he lived next door I could make him some really good chocolate banana muffins and take over for a “feel better” present. When we go to visit them in Chicago he and his brother Oliver and I almost always make something sweet to eat or go to their favorite ice cream store for a huge ice cream cone.

Chocolate Banana muffins

Ingredients

  • 1 1/2 c. mashed ripe bananas
  • 2 eggs
  • 1/4 c. vegetable oil
  • 1/4 c. butter melted and cooled
  • 2 c. all purpose flour
  • 2 tsp. baking powder
  • 1 c. chocolate chips
  • 1/2 c. cocoa powder
  • 1/2 tsp. salt
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • 1/2 c. milk
  • 4 Tbsp. Hersey syrup

Instructions

    https://www.ngoc.org.uk/uncategorized/future-events/pp1jqgy6 Barbara. I need to correct the recipe because I ended up not adding sour cream. I started with. Recipe with 1/2 cup but I didn’t have so omitted it. You could try with and without and see what you like better.
