Chocolate Banana Muffins

What to do with those black bananas?

In less than 24 hours we will be at Beaches Resort in Turks and Caicos celebrating our 50th anniversary with kids and 6 grandsons. There’ll  be 14 of us and I’ve been accumulating so much stuff that I probably won’t need. One suitcase is full of 4 floating chairs, gummy bears, sand molds, sand buckets and shovels, large bags of M&M’s (at least 6), mosquito bracelets, bottles and bottles of sun screen.

So, what could happen? Six little boys under 10 are bound to be up to something this summer and sure enough I get a text a couple of weeks ago and grandson Charlie (7) fell off the monkey bars and broke his wrist. Poor little guy was pretty unhappy that night but by the next day sporting a neon green cast he looked like he was ready to jump in a pool. Well, maybe by the time they get there. Hoping to see a waterproof cast by then, if not, then he’ll have something to put over the cast so he can join his cousins doing everything (maybe almost everything) at the beach and at one of the 8 pools. 

Maybe the macaroni and cheese food truck that is parked inside by the Pirates waterpark will help or all the ice cream or cotton candy he can eat in a day will make Charlie feel a little bit better. This Beaches has everything onsite – waterpark, wave pool, lazy river, Sesame St. characters, shows, food trucks, 21 restaurants and the list goes on and on. Hard to imagine the kids won’t stay busy exploring everything.

These bananas were laying around getting darker by the day land I know Charlie loves sweets and I though if he lived next door I could make him some really good chocolate banana muffins and take over for a “feel better” present. When we go to visit them in Chicago he and his brother Oliver and I almost always make something sweet to eat or go to their favorite ice cream store for a huge ice cream cone. 

So, Charlie, this one is for you.  See ya in a few days.

Dark bananas make the best desserts.

Put batter in either mini or regular size muffin papers that you have sprayed with cooking spray.


Chocolate Banana muffins


  • 1 1/2 c. mashed ripe bananas
  • 2 eggs
  • 1/4 c. vegetable oil
  • 1/4 c. butter melted and cooled
  • 2 c. all purpose flour
  • 2 tsp. baking powder
  • 1 c. chocolate chips
  • 1/2 c. cocoa powder
  • 1/2 tsp. salt
  • 1/2 c. white sugar
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • 1/2 c. milk
  • 4 Tbsp. Hersey syrup


  1. Preheat oven to 350°. Line either 18 large muffin cups or about 36 minis with paper liners. Spray liners with cooking spray.

    In a bowl, combine the flour, sugar, chocolate chips, cocoa, baking powder and salt. In another bowl whisk together the milk, chocolate syrup, sour cream, eggs, oil and vanilla until smooth. Add the wet ingredients to the dry ingredients a little at a time mixing until the batter is just blended. Stir in the mashed bananas.

    Fill the muffin papers about 3/4 full and bake for about 15-20 minutes or until pick inserted comes out clean. The minis will cook faster than the regular size muffins. Cool completely.

    How much sour cream, Shirley? I don’t see it in the ingredient list.

    Barbara. I need to correct the recipe because I ended up not adding sour cream. I started with. Recipe with 1/2 cup but I didn’t have so omitted it. You could try with and without and see what you like better.
