Mediterranean Grain Salad

Ingredients

  • 1 small jar kalamata olives about 3/4 cup
  • 2 medium tomatoes chopped (I used red and yellow)
  • 1 cucumber chopped in 1/2" cubes
  • 4 oz. feta cheese crumbled
  • 1/2 medium red onion chopped
  • 1-2 lemons zested and juiced
  • 1/3-1/2 c. olive oil
  • salt and pepper to taste
  • 1/2 pkg. Harvest Grain Blend (or orzo baby garbonza, quinoa or couscous

Instructions

  1. Cook the grain according to package directions. Drain in colander and cool a few minutes.  I usually add the olive oil (or some of it) just so the grain doesn't start sticking together. After it has cooled almost to room temperature add the tomatoes, cucumber, onion and feta cheese.
  2. Add the zest from the lemon and lemon juice and the rest of the oil or just enough of it to totally dress the salad.  Salt and pepper to taste.
