Confetti Maux Choux

Ingredients

  • 3-4 ears of corn cut from cob
  • 1/2 c. red onion chopped 1/4" dice
  • 1/2 c. red yellow or orange bell pepper (or combination of all)
  • 1 jalapeno pepper seeded and minced
  • 1 c. okra sliced
  • 1/2 c. heavy cream
  • 1 Tbsp. butter
  • 1/2 tsp. salt
  • pepper to taste
  • 1/2-1 tsp. fresh thyme AND oregano or 1/4 tsp. each dried
  • 2 Tbsp. Italian parsley chopped

Instructions

  1. Heat a 10" skillet then add the butter and stir until melted. Add in the red onion, jalapeno and the chopped bell peppers and saute for about 4-5 minutes until the onions start to get translucent.
  2. Add the okra and stir for another 2-3 minutes and then add the corn kernels, thyme, oregano and salt and pepper. Stir about 3-4 minutes until corn looks done but still crisp. Stir in the cream and mix thoroughly.
  3. Enjoy.

      I really liked the combination of the corn and okra. I have never cooked the two together before.
