Sweet Potato Biscuits with Ham and Orange Marmalade

Everyone makes biscuits, but have you tried sweet potato biscuits with ham and Marmalade.

How many ways have you prepared sweet potatoes — sweet potato pie, sweet potato casserole with marshmallows or nut topping, or rosemary baked sweet potato wedges (yum, these are the greatest). I just came across this recipe today for Sweet Potato Sticks wrapped in bacon and sage. I will be trying these soon. They look wonderful. What doesn’t taste good with bacon wrapped around it.

After kneading a few times with a little flour on a flour dusted mat and rolling to about 3/4″ thickness, use a 1″ biscuit cutter and cut out your biscuits.

Sometimes I use ham that I have left over from baking a ham and sometimes I buy ham from the deli, cut in thin pieces and ruffle it on the biscuit. Spread one or both sides of the biscuit with a little orange marmalade.

https://mmopage.com/news/71hq4bcge For a party, I normally line these up in a baking pan, cover with foil. I usually put these together the day before a party and then all they need is a pop in the oven for about 10-15 minutes to warm up.

Sweet Potato Biscuits with Ham and Orange Marmalade

Ingredients

  • 2 c. self rising flour
  • 1/4 c. sugar
  • 3 Tbsp. shortening
  • 2 Tbsp. butter softened
  • 1 cup sweet potatoes mashed
  • 1/3 c. milk
  • ham slices
  • orange marmalade

Instructions

  1. Preheat oven to 400°.
  2. Put the flour and sugar into a stand mixer bowl, add in the shortening and butter and mix only until you have about pea size pieces. Add in the sweet potatoes and milk. Mix until just blended.
  3. Turn the dough out onto a floured board and knead the dough a little using a little more flour if needed. Roll out to about 3/4" thick. Cut biscuits with 1" biscuit cutter. Put the biscuits on either a silpat, parchment or  sprayed cookie sheet. Bake for about 15-20 minutes at 400° until a little brown on top and bottom.
  4. Slice the biscuits, add some ham and orange marmalade. Either pop back in the oven for a few minutes to warm everything together or put them in baking dish, cover with foil until you are ready to serve them either that day or the next. If you do this step, then rewarm at 350° for about 15 minutes.
