I don’t know if I have mentioned this before and I will probably mention it at least a gazillion times before I can let it go, but while we were in France our freezer shut off for no apparent reason and one of the things I lost was all the summer fruit I had picked (or bought) last summer and put up for future use.

I’m serving this tonight for dessert with a soup that I threw together with a bunch of other stuff I cleaned out of the freezer.  The soup may not be worth keeping around for leftovers, but I know the cake will be delicious and hey, I still have some of that Blue Bell Homade vanilla ice cream that is waiting around for someone to eat it.

Sugar Plum Cake

Like the cream puffs that the little bakeries in the town we stayed in made. They had a chunky sugar (sucre pearl) sprinkled on top with powdered sugar on top of that.We had those several times in Provence. I loved the large sugar palmiers that we bought each morning for breakfast, and the Macarons that we had from Laduree were wonderful.

I didn’t want to tell them that it was made from prunes because I was afraid that the cake would be shunned. So I simply said it was a sugar plum cake made with plums. Everyone enjoyed the cake and I finally fessed up to the fact that it was indeed made from prunes. Maybe most people don’t like prunes but I love them. Can’t stand the juice because it looks and taste like it is made for someone 90 years old with a problem. I do love having the individually wrapped prunes on hand for snacks.

This is a recipe my sister gave me and another one of her recipes she has been trying to get me try for quite some time. So, I decided one day to make it and I was very happy with the results.

Mama’s Butter Cake

Great plain or covered with berries and cream.

My grandmother on my mother’s side was never a “grandma” but a “mama”. I’m a “gran” to my two grandsons and I better not ever catch them calling me granny or any of those other old sounding names. I’m not old yet. I still have a few recipes in my apron pocket.

Isn’t it wonderful to have all those memories stored up of family favorites. I associate foods with all kinds of events and can recall what we were doing with certain foods. We were in NYC a couple of years ago and had dinner at Gramercy Tavern and were served an amuse bouche that was a homemade tater tot with a tapenade piped into the center and it was served in a tiny dish perched on top of sea salt. So when I see tater tots on a menu, I think of that New York trip and eating one of the best meals we have ever had. But those were not ordinary tater tots we had that night and I have the recipe courtesy of Executive Chef Michael Anthony.I can think of a bucket of mussels and picture sitting outside at this little cafe in Bruge enjoying a delicious lunch. I know I’m strange because thinking of food and recipes takes up a large part of my thoughts.

My “mama” use to make this wonderful one layer butter cake that we would either eat plain or with berries and whipped cream. Sometimes we would just eat it right out of the oven with a pat of butter spread on top . She is still living in her own home but does not know anthing about the whereabouts of that recipe.

This is my attempt to re-create her declicous butter cake to bring back those childhood memories of that cake. I actually let go of some of my raspberries I have been hoarding in my freezer, and with the strawberries and a little sugar, they made a great filling for this cake.

There were two ways of making this cake; separating the eggs and whipping the egg whites and folding into the batter or adding the whole egg. I opted for the whole egg since I decided to make this about an hour before our company came. We only used one layer that night and my husband cut up the other layer into large wedges and froze it. That has been his bedtime snack for the last week.

Cupcakessssssss!

Now don’t take me wrong, I’m not saying I’m an old dog or anything like that.  I think I may still have a few new tricks in me.

Lately, it seems like I tend to get obsessed with things. For instance, cooking for the blog, trying to make my camera take better food pictures, and taking computer classes at the Apple store.  Now I’ve started a miniature fairy garden and ordered my first house for it and now I’m trying to figure out how to make a miniature pond and table and patio for the fairy garden.

Now if that isn’t enough, three weeks ago, I started cake decorating classes at Hobby Lobby and then turned around and signed up for fondant and gum paste classes the following day. I must have been nuts at the time.

I’ve been catering for 20 years and one thing I have always wanted to know how to do was to decorate a pretty cake and hey, why not learn to make fondant covered cakes and flowers at the same time.

When I think of St. Pat’s I think of Ferris Bueller and that infamous movie. Loved that show. And I think of Rolla, MO where my husband when to school and they had such crazy St. Pat party weekends where the frat house would turn everything green from the beer to milk to mashed potatoes.

De-railed Thomas the Train Cake

Most people would have been in tears when they opened their refrigerator and saw all the frosting drooping off the sides of their cake. BUT, not me.

My son Paul was making a Thomas the Train birthday cake for my grandson’s 2nd birthday. It was a beautiful 3 layer perfectly level chiffon cake and I have to say it was totally my fault the French buttercream did not turn out. I miscalculated the butter; 24 oz. is NOT 3 sticks of butter, but 6.

So, here’s what happened. When we saw the cake sagging. I laughed and said “this looks like a train wreck”. Since little Milo loves the part of Thomas The Train when the train wrecks, my son took his black frosting and besides the Happy Birthday, he made a train track and had it continue off the side of the cake. And then we used some of the Thomas the Train car pieces and stuck them in the side and bottom of the cake like they had just driven off the side of the cake. I have to say it was ingenious and saved the day.

Milo looks happy with his cake even though the train de-railed.

Looks like mom might be explaining that Thomas fell off the cake. Oh, whatever, it still tasted wonderful.

I definitely owned up to my mistake and the kids and adults all loved the cake and cupcakes.

Moral of the story — don’t let minor derailments spoil the party. After all, kids just want something sweet, they don’t care what it looks like.

Dreamsicle Cupcakes

We were visiting our new grandson, Oliver, in Chicago a couple of weeks ago. He’s now 3 months old and boy, how time flies. Seems like it was just yesterday that we went up to Chicago to meet the new Michie baby boy.  And, it seems like just yesterday I was a little kid eating cho cho ice cream malt cups and those dreamy dreamsicle ice cream bars.

I love mixing orange sherbet and vanilla ice cream together in a parfait class because it reminds me of dreamsicles that use to drip down my arm on those hot summer days in Missouri and I still love that flavor of orange and vanilla mixed together.

There’s a bakery in Lincoln Park (Chicago), Sweet Mandy B’s, that has the best baked items ever, and we went there after lunch at Longman & Eagle one day. Of course, we had to come home with some molasses frosted cookies that my son loves and some 7 layer bars, chocolate cookies, a macaroon and this wonderful little Dreamsicle Cupcake.

I was staring at this lone beautiful cupcake sitting in the box along with all the other cookies and really wanted to gobble it up all by myself. After all, I was the one thinking of dreamsicles and having all these childhood memories, but I shared the cupcake because I wanted everyone else to see how delicious it was.  I KNEW I could make this cupcake.

I did a little research and found that this recipe first appeared in Southern Living magazine in 1976 by a Mrs. Wiggins. But the cake also has Jamican roots. Dr. Bird (hummingbird) is the national bird of Jamica and supposedly a passenger on the Jamican Airlines received this Hummingbird Cake (Doctor Cake) recipe back in the 60’s.  Maybe that was back when airlines served real food and not those little mini turkey/ham sandwiches that we get now when we fly (if you even get that). Or, maybe it gets it’s name from the Hummingbird and the fact that they are drawn to intenstly sweet food sources, and once their appetites are sated they quickly move on. Wherever this recipe came from it is a keeper and will quickly disappear (just like the hummingbird) when you serve it at your next party.

I was so hoping to snap a picture of a hummingbird in our back yard (we see them all the time) with my new zoom lens. Haven’t seen one in a few days though but I plan on posting one soon.

Recently, I made these little cupcakes for a Jimmy Buffet pre concert party I catered. I thought they fit perfect with the tropical theme. They also freeze beautifully. I topped these with my dried pineapple flowers.

Heart Shaped Devils Food Cake

We just got back from a trip to Chicago over the weekend visiting our son and daughter-in-law and future baby to be. We ate at some wonderful restaurants (we always do) while there. One of my new favorites is The Publician. We had sweetbreads there, lots of different sausages, pork belly small plate and some homemade pork rinds. We also had Indian and Costa Rican food over the weekend. The one thing we didn’t have was dessert — chocolate. So the first thing I thought of when I got back was this cake I had made over Mother’s Day weekend.
