A couple of days in Amsterdam, cruising for 8 days and 9 days in Spain and I only gained 2 pounds.  Didn’t think I would ever be glad to say I gained weight, but after the way we ate and drank for 19 days, I’m surprised my husband could fit me through the door.

My last entry had pictures of many of the tapas we had while in Spain. We had a Pork in Whiskey Sauce at this one tapas bar in Seville and I have tried to recreate that recipe and I must say, it was almost exactly like the one we had there.

https://www.prehistoricsoul.com/fiktoxrojp A little more about our trip. We had some great Indonesian food in Amsterdam and were able to visit Van Gogh and Reich museum. Ann Frank’s house was a very interesting tour and we toured Heinken Brewery — who doesn’t like beer (me). In Brugge we tried steamed mussels and frites, Belgium chocolates (DELICIOUS), Belgium waffles with chocolate and a cup of coffee that was half chocolate, 2 shots of espresso  and topped with a creamy hot chocolate.

https://www.justoffbase.co.uk/uncategorized/ssdpkzkfk4s Our food on the ship was wonderful and I got a lot of great ideas for tapas and things I might want to try for dinner parties.  Our port calls were Brugge, Cherborg (did Normandy tour there), Lisbon, Gibratar, Vigo and the cruise ended in Barcelona. Then it was time to hit all those tapas bars I had been reading about. We spent two days in Barcelona making the Mori and Picasso museums and Gaudi cathedral and lots of shopping and walking, walking, walking (guess that is why I only gained 2 pounds).  We flew from Barcelona to Sevilla (my favorite of all our Spain cities). Very cool city with streets just wide enough for a taxi to race down causing people to jump up on the curb (no sidewalk to escape to, so watch out).

Tapas, Tapas, Everywhere!

I have read that originally in Spain, tapas were served as a cover for a glass of wine so flies and other objects did not get into the glass. That may be a myth, but it makes perfect sense. In the beginning the tapas plate probably contained olives and cheese and peppers but tapas have evolved into something you could enjoy for breakfast, lunch or a whole dinner. In a tapas bar you just keep ordering small plates until you are full which is so much better than to order some huge dinner and then try to consume the whole thing since you paid for it and all of us, of a certain age, remember the “clean your plate” comments from our mothers because of all the starving kids in the world.

These are just extra large pitted green olives that I stuffed with strips of Serrano ham. And, I absolutely love my mini paella pans I found. I have 5″ and 3″ pans.

If a muffin gets too sweet it seems more like a cupcake than a muffin.  A muffin is typically a quick bread recipe that you portion it out into muffin cups whereas a cupcake is a cake batter make into individual portions.

I use to cater a lot of business breakfasts and this was one of the muffin recipes I frequently used. I normally use a dark rum but on this day someone had drank all my dark rum and I had to use an orange flavored. It was good but I like the dark or even light rum better than flavored rum.

I know all of her recipes are loaded with butter, cream and everything good (or not good for you) but for some reason I perked up and started paying attention to her show.  I made a few changes; blue cheese for the Parmesan cheese, and I added some sauteed shrimp to the finished dish. Thank you Paula for inspiring my version of your recipe. I loved the blue cheese in the sauce.

Banana Foster Ice Cream

When I made this I was thinking of our upcoming trip to New Orleans.

I love bananas. I prefer mine on the green side and my husband likes them when they look like they are about 2 days away from decomposing. Of course, the dark over ripe ones are the best for making banana breads and anything else you want a really intense banana flavor. Seems like they have a much more sweeter banana taste than the green ones.

Back in the early 70’s we moved to Ft. Madison, Iowa. We were living in Louisville, KY at the time and I remember people telling us we were moving to the “Florida of Iowa” area of the state. How wrong that statement turned out to be. We had 100 days of snow cover one year and if it wasn’t for joining the Welcome Wagon club and church functions I would have gone crazy. When I first heard doctors on TV talk about “cabin fever” I didn’t know what they were taking about. But, when you are huddled in a house with three kids all day trying to stay warm and keep them entertained, then you catch on quickly. (We weren’t really huddled in the house staying room, but it was too cold for the kids to go out and play.) My daughter use to ride her trike in the basement because it was too cold to go outside. We had lots of Easter egg hunts inside because of the weather.

I have said before that breakfast has always been my least favorite meal of the day. If I have to scramble eggs, I will turn them into migas (scrambled eggs with onion, jalapeno, tomato, cheese and at the end you throw in a handful of crunched up tortilla chips.). If my husband wants a fried egg I usually talk him into Toad In A Hole (bread with hole cut out, buttered, grilled and you drop a cracked egg in the hole and continue cooking). If I want a extra special boiled egg, I will make Scotch Eggs (peeled boiled egg, surround in pork sausage, brushed with egg and dipped in bread crumbs and fried). Well this egg dish is no ordinary egg either. It looks hard to make but very easy and will delight your weekend guests or do it just for your family.

For a garnish I did use some jalapeno lime cream fraiche that I had made the night before to go with some fish tacos. On some of the cups I added fried bacon to the bottom of the cups before adding the whites. I like the surprise at the bottom of the dish. I also sprinkled a little bacon on top of some when they came out of the oven.  A side of toast would be great to dip in the egg yolks that are still runny when you take them out of the oven.

Thin and Crispy Onion Rings

I have always loved onion rings but always hated biting into one and having the onion slice slither out of the breading, usually burning my lip because I was in a hurry to eat it. This will not happen with these onion rings.

This was one of my parent’s recipes that my mother use to make.  When my dad started taking over a lot of the cooking, he then did these to perfection also. He would even use this same method to make fried squash or even fried banana peppers. I really think you could use this on just about any vegetable. I’ve been wanting to try green beans and will do that the next time I get out my deep fryer.

If you have never tried making onion rings because you think it would be too complicated, think again. In this recipe you simply dunk the thinly sliced onions (I think having a mandoline is a must) into buttermilk. Let them set a few minutes and then shake in self rising flour. Definitely use self rising flour because the flour already has salt and baking powder in it and it just makes for a tastier coating . I’ve tried using plain flour but when I do, it seems like I can never get them salty enough after frying.

Mango Pineapple Sorbet

The past few days we were in Chicago visiting our son, daughter-in-law and brand new grandson, Oliver. In between holding the baby and holding the baby, I made this great fruity sorbet. They loved it and I think you will too.

Mango is one of those strange little fruits that I probably didn’t try until moving to Texas years ago. A mango has a sweet, aromatic, smooth and luxurious flavor. They will probably be green with some red on them when you buy them and mine always seem to be hard. Just let them sit out on your counter to ripen a few days before using them in this recipe.

Several months ago I taught an ice cream class at Williams Sonoma. I made a strawberry ice cream, a chocolate cherry gelato, and this recipe for Mango Pineapple Sorbet was one of every one’s favorites of the day. I also did a yogurt berry swirl that was wonderful and I will post that sometime before summer is over. I have a couple more ice cream recipes I want to post soon.

A day at the farmer’s market.

Ya know, there is just something about going to a farmer’s market that feels so good. I think I get that feeling because I know I am getting fresh and locally grown food by people who really care about what you are eating.

Years ago, we use to get excited just seeing a farm stand along the highway. We always knew their produce would be the freshest available in the area.

I just finished a book, Summer House, and loved reading about this girl’s farm stand, how all the locals at Nantucket would stop to buy her flower bunches for $70+ and about all her organically grown produce. Reminded me of how excited I get when I go to a Farmer’s Market. I’m looking forward to going to the Boqueria market in Barcelona in September while we are there. The first mention of this market dates back to 1217. I understand from a friend that I will see fruits and vegetables that I have never seen before.  Believe me, I will have camera in hand.

This past spring we were in Chicago visiting our son and daughter-in-law (baby boy arrived YESTERDAY!) and one day we went to the Green City Market in Lincoln Park. It was too early for a lot of the summer vegetables like tomatoes, squash etc. but talk about a variety of vendors! There were people selling homemade crackers, cheese (and even cheese curds), micro greens, veal, tongue, BRAINS, fried donuts, potatoes, PURPLE asparagus, onions, flowers. I love seeing people take their dogs on these outings and there’s always a dish of  water out for the dogs so they have something to drink.

Every Time we go to Austin to visit our other son, his wife and their baby and our daughter we always make a trip to the Barton Creek Farmer’s Market knowing that our dinner that night will be fresh off the farm. We  were there over July 4th weekend. Things for sale that day included, squash blossoms, meats (we bought pork cube steak), butter, breads, corn, flowers, honey, all kinds of peppers, cupcakes (of course we had to have some of those). There were several music groups that entertained during the day.

Raspberry Nutella Gelato

Hazelnut chocolate and raspberries make the perfect combination for this gelato.

I’ll never forget the first time we had gelato. We were in Italy with friends and we knew we would be seeing gelato stands on just about every corner of any town we were visiting. Kind of like Starbucks or back in the day when there was a gas station or beauty shop on just about every corner in our home town.

Well, once we tried gelato, we found ourselves eating it at LEAST once a day if not twice on some days. I loved the little spoons that came along with the gelato. I think my favorite flavor was pistachio. I’m sure between the six of us, we tried just about every flavor offered.

Nutella was also something I had not tried before. While in Italy we were served Nutella for breakfast with crusty breads. Since coming back from Italy I have tried it on top of waffles, made a Nutella Cherry Dumpling, filled won ton wrappers with Nutella (fried, and powdered sugar them), filled strawberries with Nutella but I have never been tempted to just eat it out of the jar with a spoon.

I was watching Giada at Home the other day and she was making Nutella Gelato and I deceided to make my own version. I added in the crushed raspberries just as the ice cream was almost finished churning. I also changed the whipping cream to Half and Half.
