I’m always on the lookout for some new green veggie combination and when I first ran across this bag of veggies at Trader Joe’s I thought they were just salad ingredients but upon reading the bag I saw that the veggie blend could be used in sautés also. Here’s what I did one day for lunch then improved upon it the next time I used the bag of veggies.

My second attempt was even better. I used about 1 teaspoon of sesame oil along with 1 tablespoon of olive oil, sautéed the veggies, added in the chicken as I did the first time along with about 1 tablespoon of soy sauce and then sprinkled in some sesame seeds at the end. I’m giving you the second version recipe but know if you just want to throw it in a skillet, sauté, add some chicken, it is still delicious.

If you are looking for this at Trader Joe’s it is called Cruciferous Crunch Collection. Crunch, maybe because all the veggies are crunchy if you don’t cook them too long. If you can’t find this use a mixture of kale, Brussels sprouts, broccoli, green and red cabbage all kind of shredded into strips.

Cruciferous Chicken Crunch
Crunchy blend of veggies and chicken. Quick and easy to prepare.

Ingredients
  1. 1 bag of Cruciferous Vegetables from Trader Joes*
  2. 1/4 tsp. garlic powder
  3. 1/2 tsp. onion powder
  4. 2 Tbsp. olive oil
  5. 1 tsp. sesame oil, optional
  6. 4-5 boneless smoked (or baked) chicken thighs, cooked and chopped
  7. 2 tsp. soy sauce
  8. 1 tsp. sesame seeds, optional for garnish
Instructions
  1. Heat the oil(s) in skillet on medium-high heat until hot. Add all the vegetables and quickly stir until they are starting to cook. This may take 4-5 minutes. You want them to remain a little crunchy.
  2. Add in the garlic powder and onion powder. Toss in the chopped chicken thigh meat and add a splash of soy sauce. Salt and pepper to taste.
  3. Garnish with sesame seeds. Serve and enjoy.
Notes
  1. If you cannot find the cruciferous vegetables try this. 2 cups of shredded Brussels sprouts, 2 cup each red and green cabbage, 2 cups of broccoli, including stems, cut in long thin or shredded pieces. I also added some fresh spinach the first time I did this.
  2. I think some toasted sliced almonds would be delicious in this mix.
