We moved from The Woodlands about 8 weeks ago to Round Top, Texas. Our son, Paul, and daughter-in-law, Brooke are opening Round Top Brewing and Lollitop Sweet shop (right next door to the brewery). Eventually we will start working on house plans but right now we are helping them do whatever we can to get the two places open. 

So, on weekends we have been driving around to some of the wineries in the area and enjoying some local wines. The hardest part of this move has been not really seeing people’s faces. If I go into the local mercantile and talk to someone, I’m not going to remember them because I haven’t seen the face on the other side of the mask. The winery outings have been nice because the people that are there are social distancing and you can at least see some friendly faces.

I’ve been experiment with so many things that they might offer in the sweet shop. The focus will be on candy with some yummy baked goods made by me. There are so many recipes  I’m experimenting with like sugar cookies shaped like donuts and covered with icing and sprinkles, cookies, bars, coffee cakes and today I was trying out my new krumkake electric baker; just haven’t decided what I might want to fill these with.

Maybe we will skip dinner altogether and just go straight to dessert. Oh, I almost forgot another recipe that turned out to be a winner and that will be my peach cobbler muffins. I can’t tell you how good they were; I just wished I had one now with a big glass of iced milk.

Peach and Blackberry Cobbler

Ingredients

  • 6-8 large peaches peeled and sliced
  • 1 1/2 c. fresh blackberries
  • 1/3 c. brown sugar
  • 1/3 c. granulated sugar
  • zest of one lemon
  • juice of 1/2 lemon
  • 2 tsp. cornstarch
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • Topping:
  • 1 c. all purpose flour
  • 1/2 c. quick oats
  • 1/3 c. brown sugar
  • 1/3 c. granulated sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp salt
  • 1 stick butter cubed
  • 1/3 c. boiling water
  • Sugar topping:
  • 4 tsp. granulated sugar
  • 1 1/2 ts. cinnamon

Instructions

  1. Preheat the oven to 425°.

  4. In another bowl, mix the flour, sugars, baking powder and salt together. Cut the butter into this mixture and either using your fingers or a pastry blender blend until you have small pea size pieces. Pour in the boiling water and stir until it is combined.
  5. Spoon this mixture over the fruit and spreads gently to cover. I parts of my fruit showing through.
  6. For the final topping, mix the white sugar and cinnamon together and sprinkle on top of cobbler. Bake for around 35 minutes until topping is golden brown.
