- 2 Tbsp. seasoned rice vinegar
- 2 tbsp. minced shallots
- 1 ½ tsp. Dijon mustard
- ¼ tsp. salt
- 1/8 tsp. coarsely ground black pepper
- 2 bunches arugula or use 1 bunch spinach
- 3-4 ripe medium peaches peeled and sliced
- Arugula croutons
- Avocado optional (I will be adding this the next time)
