Ingredients
  1. 1 envelope unflavored gelatin
  2. 5 egg yolks
  3. 1 c. sugar
  4. 1/3 c. dark rum
  5. 1 1/2 c. heavy whipping cream
  6. 1 c. heavy whipping cream, for garnish, optional
  7. 1/4 c. powdered sugar
  8. pineapple, kiwi, mango & raspberries for garnish
crumb crust
  1. 1 1/2 c. graham cracker crumbs
  2. 6 Tbsp. butter, melted
  3. 1/2 tsp. cinnamon
  4. 3 Tbsp. sugar
Instructions
  1. mix the cracker crumbs, melted butter and sugar together with a spatula until combined. Press the mixture into the bottom and up the sides of a pie plate. Bake at 300° for about 10 minutes. Cool before adding the filling.
  2. Soften the gelatin in 1/2 c. cold water. Place over low heat and bring almost to a boil, stirring until it is dissolved.
  3. Beat the yolks and sugar until very light. Stir gelatin into egg mixture, cool. Gradually add the rum beating constantly.
  4. Whip 1 1/2 cup of the cream until it stands in soft peaks and fold into gelatin mixture. Cool until mixture begins to set. Spoon into crust. Chill.
  5. Whip the additional cup of heavy cream with the powdered sugar until stiff peaks form. Pipe rosettes of cream around the edge. Garnish with some of the chopped mango, kiwi, raspberries and pineapple.
Notes
  1. If you don't want to do the piping, just add a dollop of whipped cream on top of the pie with some of the chopped fruit and a little sprig of mint leaves.
