Crunchy Asian Salad with Peanut Dressing

Good with chicken too!

Have you had a big reunion yet for either high school or college? My 50th high school union was last year and this year was my husband’s (yes, I have to admit I was a cougar even before that was even a word referring to marrying a younger man; he’s only 9 months younger though.) and I have to say it was so much fun seeing everyone. Our high school, (in Caruthersville ) back then may have had 500 students total, so it was easy to know just about everyone in the whole school.

I knew almost everyone that walked through the door at the brunch that one of his classmates had at her house (thanks Geneva). How time flies; everyone looked the same, just a little older, grayer and a few more wrinkles than we had in high school. One friend, asked my sister and I if we remember one night after a football game that we were racing one of my husband’s friends when we were going home (my sister was driving I’m sure) and we went air bound off the road and landed in a field. How could we ever forget that; we probably (maybe) never raced anyone again. No one was hurt, just a little shook up. We did a lot of crazy things back then that I’m sure even our kids never heard about.

Before attending the reunion, we drove to Chicago to see our son and his family. We are always cooking up some new recipe and my daughter-in-law, Missy found this recipe on Pinterest. Grandsons Oliver and Charlie helped me make Oreo ice cream twice and their mom made three salads she had found on Pinterest; this was one of them. I liked it so much I decided to post it to the blog incase you didn’t see it on Pinterest.

Thai Steak Salad

I’m a copycat but it’s worth it for this recipe.

I hope everyone had a wonderful holiday season. Christmas came and went so fast and the New Year is here, and everyone is wanting to cut calories and food intake.

What are your New Year’s resolutions? Well when it comes to food I would like to do one vegetarian meal a week, fish at least 2 times a week (baked or pan fried), a main dish salad at least once a week, and then try and fill in the other days with healthier meals made with chicken and some pork. I think having salad is a perfect start to the new year.

What is it about a salad that is so refreshing even if it is loaded with tons of ingredients? I don’t know but I think most people feel like they are watching their calories when eating salad and that’s not always true.

A couple of years ago I gave up buying all those creamy prepared salad dressings and now whip up any type of vinaigrette at a moments notice. As long as you have olive oil, vinegar (some balsamic also), some Dijon mustard or other types of mustard and seasoning, you can whip up a dressing almost as quick as you can grab for that high fat store bought dressing that might still be in your refrigerator.

I don’t really think about the calories when I’m making a salad at home. I’m just thinking I can make one thing and not doing a protein, sides, etc., etc. Even though this salad has a long list of ingredients, you can prep everything early in the day and then just throw it together for your evening meal. For a salad with few ingredients and big taste, I posted the Bitter Green Salad with Yuzu dressing from our Hawaiian feast a few weeks ago.

My sister has always loved Houston’s Restaurant Evil Jungle Thai Salad. I have yet to taste it but I take her word that it is a delicious salad and she says it’s her most favorite restaurant salad.

So I started googling their recipe and came up with several copycat recipes. I’m sticking with the dressing recipe but added more garlic (or course) and for the salad, I omitted the noodles just because I didn’t think I would like noodles in a salad. I also added oranges instead of mango (I eat enough mango as it is), added the fresh ginger, jalapenos, the avocado and the savoy cabbage along with a mixture of lettuce. I browned my sesame seeds (not in their recipe) and the peanuts in a dry skillet which really adds a nice toasty taste to the salad. I think I changed enough ingredients in this salad to call it my own but I would have to say the Evil Thai Steak Salad from Houston’s Restaurant was definitely my inspiration.

While visiting in Chicago before Christmas, we made this one night at our son and daughter-in-law’s house, and we all enjoyed it along with some fresh crusty French bread and some Cambozola cheese.

Asian Chicken Salad

I love all the flavors of Asian food and this has them all.

I remember the first Asian type salad I ever had and it was sitting by myself in a pub in Truckee, CA. Years ago, our family had gone on a ski trip during a spring break from school. One day they were skiing at Squaw Valley and since I don’t ski (been there, done that, hurt knee, surgery, all that stuff–afraid now) I decided to drive myself over to Truckee to shop and have lunch. I didn’t know it at the time but later I found out that about 100 movies have been filmed in Truckee –Misery and True Lies were two of them.

Anyway, I went to this little pub for lunch. They had this great Asian Chicken Salad and I remember they had these fried won ton chips in and around the salad. I love this addition to the salad and now I make the little chips all the time for salads. When I set out to make an Asian type salad, I hardly ever remember what I put in it from one time to the next. So, I’m always coming up with something new to add to the recipe. Sometimes I use red cabbage sometimes the radicchio. You can pretty much put anything you like it in and it will be delicious.
