Brush the baguettes with a little olive oil and bake baguette slices at 350° for about 5-6 minutes.

Mix the mayonnaise and horseradish and set aside.

Make sure the roast beef is thin enough to roll but not shaved. Cut the beef into about 3/4" slices down the length of the slice. Carefully start rolling up into a rose shape. You maybe want to have some looser as you roll up so it looks like a rose.

To assemble put a little smear of the horseradish mayonnaise on the toasted baguette. Add a small arugula leaf on each end with tips pointing out and top with roast beef rose.
