Peanut Zucchini and Cumcumber Salad

Ingredients

  • 1 large zucchini spiralized
  • 1 English cucumber spiralized, or regular cucumber
  • 1 red bell pepper cut into toothpick size strips
  • 1/2 c. cilantro chopped
  • 1/2 c. peanuts or pinenuts
  • 1/2 c. very thinly sliced red onion
  • Dressing
  • 2 tsp. honey
  • 1 Tbsp. soy sauce
  • 1/2 tsp. chili oil
  • 2 tsp. rice vinegar
  • 1 Tbsp. sesame oil
  • juice of one lime optional

Instructions

  1. Use a spiralizer*and cut your zucchini and cucumber into long spirals. I used a mandolin to cut the red pepper and red bell pepper into very thin strips.
  2. Put the noodles, red bell pepper, onion, cilantro into a bowl. Cover until ready to add dressing.
  3. For the dressing mix all dressing ingredients together with a whisk. Taste and if you want it a little more tart, then add in the lime juice. Set aside.
  4. About 30-45 minutes before serving, toss the noodle salad ingredients with enough dressing to coat. Top with chopped peanuts and serve.

  6. *If you don't have a spiralizer then you could use a mandolin or a julienne tool to make long strips.
