Cruciferous Chicken Crunch

Ingredients

  • 1-2 bags of Cruciferous Vegetables from Trader Joes*
  • 1/4 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 2 Tbsp. olive oil
  • 1 tsp. sesame oil optional
  • 6 boneless smoked or baked chicken thighs, cooked and chopped
  • 2 tsp. soy sauce
  • 1 tsp. sesame seeds optional for garnish

Instructions

  1. Heat the oil(s) in skillet on medium-high heat until hot. Add all the vegetables and quickly stir until they are starting to cook. This may take 4-5 minutes. You want them to remain a little crunchy.
  2. Add in the garlic powder and onion powder. Toss in the chopped chicken thigh meat and add a splash of soy sauce. Salt and pepper to taste.
  3. Garnish with sesame seeds. Serve and enjoy.

Notes
If you cannot find the cruciferous vegetables try this. 2 cups of shredded Brussels sprouts, 2 cup each red and green cabbage, 2 cups of broccoli, including stems, cut in long thin or shredded pieces. I also added some fresh spinach the first time I did this.

I think some toasted sliced almonds would be delicious in this mix.
