Ruby Tea Biscuits

Ingredients

  • 2 C. all purpose flour
  • 2 Tbsp. sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. shortening
  • 3/4 c. milk
  • 2 Tbsp. raspberry or red currant jam or jelly

Instructions

  1. Oven 425. In large bowl, combine the flour, sguar, baking powder and salt. Mix well with a fork. With a pastry blender cut in shortening. Add the milk and mix with a fork unt until the dough forms a soft ball. Turn dough out and knead 12 times. roll to 1/4". with a 2" round cookie cutter, cut out the biscuits. lift half the circles on ungreased baking sheet 1" apart. Cut 1" roun out of center of remaining biscuits to make rings. Lift out the dough centers and set aside. With the spatula, place the rings on top of the dough circles. Carefully fill with 1/2 tsp.jam. Bake for 12-15 minutes.
