Kumquat, Corn, And a Few Other Things Salad

Ingredients

  • 7-8 small firm kumquat sliced, seeds removed
  • 2 ears corn grilled or boiled until tender, cut off cob
  • 2 vine ripened tomatoes I like the ones with vines still attached or use grape tomatoes, cut in half
  • 1 avocado peeled, pitted and cubed
  • 1 cucumber peeled, seeded and cubed
  • 1 shallot or small amount of red onion diced
  • 1 Serrano pepper seeded and chopped fine
  • 1/4-1/3 cup cilantro chopped
  • Juice of one lime
  • olive oil
  • salt and pepper to taste
  • chives for garnishing

Instructions

  1. Grill or cook your corn and cut off the cob. Cool. Slice the kumquats and add to the corn. Then add all the other vegetables. Toss in the Serrano pepper and the cilantro. Salt and pepper to taste. Squeeze juice of one lime over the salad and drizzle with about 2-3 tablespoons of olive oil. Toss, chill and serve. Enjoy!
