Raspberry Chocolate Muffins


  • 2 c. flour
  • 2 tsp. baking powder
  • 1 c. chocolate chips
  • 1 c. butter softened
  • 3/4 c. sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 Tbsp. orange zest
  • 1/2 c. milk
  • 2 c. raspberries


  1. Melt the chocolate chips and set aside. With an electric mixer, beat the softened butter with the sugar until pale and fluffy.  Fold in the melted chocolate.  Add the vanilla and orange zest.  Mix in dry ingredients in two additions, alternating with the milk. Fold in the raspberries.
  2. Spoon into greased muffin tins and bake at 375° for 25 to 30 minutes. Cool for 10 minutes before removing from pans.
  3. A little chocolate frosting could be added to top if you are wanting something a little more sweet.
