Cowboy Cookies


  • 1 c. unsalted butter
  • 1 c. granulated sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 2 c. rolled oats
  • 1/2 c. pecans chopped
  • 1/2 c. peanuts chopped
  • 6 oz. pkg. semi-sweet chocolate chips
  • 1/2 c. shredded coconut.


  1. Preheat oven to 350°.
  2. In mixing bowl of your electric mixer, cream the butter and the sugars. Add the eggs and vanilla and beat until creamy. Stir in the flour, baking soda, salt and baking powder. Add oats, nuts, chocolate chips and coconut, mix until combined.
  3. Spoon the mixture onto greased cookie sheets or use Silpat on top of sheet. Bake for 15 minutes for the small ice cream scoop size. At least 19-20 minutes when I used the large ice cream scoop to make the giant cookies. Transfer the cookies to a wire rack to cool.
