Tomato and Onion Salad

(Southern Living Recipe July 2005)


  • 1/4 c. olive oil
  • 1 1/2 Tbsp. balsamic vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. sugar
  • 1/4 tsp. pepper
  • 4 large tomatoes thinly sliced (use different colored tomatoes)
  • 1 medium size sweet onion thinly sliced (and halved)
  • 1/4 c. chopped fresh basil


  1. Whisk together the first five ingredients in a small bowl. Arrange tomato and onion slices in rows on a serving dish. Sprinkle with chopped basil, and drizzle evenly with marinade. Cover and let stand at room temperature for at least 2 hours. Serve with a slotted spoon.
