Parmesan Shrimp Toast


  • 1/2-1 lb. cooked shrimp
  • 3/4 c. mayonnaise
  • 1/3 c. grated Parmesan cheese I use fresh
  • 1/3 c. grated Swiss cheese
  • 1/4 tsp. Worcestershire sauce
  • 1/8 tsp. hot pepper sauce
  • paprika
  • fresh thyme leaves for garnish
  • baguette sliced 1/4" thick


  1. Slice the baguettes and set aside.  Mix the mayonnaise, cheeses, Worcestershire sauce, hot pepper sauce together. Stir in the chopped shrimp and refrigerate until ready to use.
  2. When ready to bake, top baguette slice with 1-2 tablespoons of the shrimp/cheese mixture. (You may want to experiment with one because you don't want to put so much filling that it bubbles up and runs off the toast.) Sprinkle with paprika and bake in 375° oven for 8-10 minutes or hot and bubbly and slightly brown.
  3. Sprinkle with fresh thyme leaves (optional) and serve immediately.
  4. *Note:  I usually make at least double the recipe for 20 people.  Once you make it you can decide how much you might need to increase the recipe.
