Toffee and Peanut Butter Muffins

  • 2 c. all-purpose flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2/3 c. peanut butter
  • 2/3 c. butter room temperature
  • 2/3 c. brown sugar
  • 2 eggs
  • 1 c. whole milk
  • 1 c. chocolate chips
  • 1 c. toffee pieces


  1. Preheat oven to 375°. Spray the muffin tins with non-stick spray.
  2. Sift together the flour, salt, and baking powder
  3. Using a mixer mix the peanut butter, butter and brown sugar until they are combined and smooth. Add in the eggs, one at a time and the milk. Continue to mix until everything is incorporated.
  4. Slowly mix in dry ingredients until just combined. Fold in the toffee pieces and chocolate chips with a spoon.
  5. Spoon mix into muffin tins. Bake for 15-20 minutes or until a toothpick can come out clean.
