Peach and Arugula Salad with Pancetta Chips

Ingredients

  • 4 slices bacon cut into ½” pieces (or use 3-4 slices 1/8” thick pancetta)
  • 2 Tbsp. chopped fresh parsley
  • 2 Tbsp. olive oil
  • 2 Tbsp. seasoned rice vinegar
  • 2 tbsp. minced shallots
  • 1 ½ tsp. Dijon mustard
  • ¼ tsp. salt
  • 1/8 tsp. coarsely ground black pepper
  • 2 bunches arugula or use 1 bunch spinach
  • 3-4 ripe medium peaches peeled and sliced
  • Arugula croutons
  • Avocado optional (I will be adding this the next time)
