That&#8217;s what I think of this recipe.<\/span><\/strong><\/p>\n<p>With Spring here and everyone is thinking of getting into their bikinis, (not me!) lighter desserts are in order. I&#8217;m not sure how many people are like me, but I would like to have a bite of something sweet after a meal. Lately, it&#8217;s just been fruit, but for Easter I made this cake and it is delightful. I have made this recipe for almost 20 years and am always wondering what we would do without &#8220;the incredible edible egg&#8221;.<\/p>\n<p>The angel food cake is believed to have originated back in the early 1800&#8217;s. The classic story behind the name &#8220;angel food cake&#8221; is that this dessert is so white, light, and fluffy it must be fit for angels. A traditional angel food cake pan is a tube pan with a removable bottom and when you take the baked cake out of the oven, you turn it upside down on a bottle so it will cool and not collapse.&nbsp; I also have a heart shaped angel food pan that makes a beautiful cake and you can buy individual angel food cake pans also for small individual cakes.<\/p>\n<p>I envision some pioneer woman with some sugar, flour and egg whites making this cake for the first time. I seem to imagine how I want things to be sometimes. Like going to the movie, if I don&#8217;t like the ending, I make up my own ending and I ALWAYS make a sequel.&nbsp; Same with this cake. Maybe SHE had made egg noodles for her family during the day and had all these egg whites left over and her&nbsp;family was whining for something sweet to eat.&nbsp;Of course she didn&#8217;t know how to make a souffle with those egg whites. After all, Julia hadn&#8217;t been born yet \ud83d\ude42 &#8212; so she whips up a light and airy dessert for her family.<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<p>Typically an angel food cake isn&#8217;t frosted. My mother always used a lemon glaze on the cake when he made one. Of course her cake was from scratch using about 12 egg whites.<\/p>\n<p>In my early years of cooking\/baking I did make my cakes from scratch, especially if we were eating it without glaze or embellishments. I have crumbled angel food cake to make a &#8220;snowball&#8221; dessert, I have used it to make strawberry shortcake, filled it with chocolate whipped cream and dunked it in fondue. But, this recipe is one of my favorite ways to use Angel Food Cake and I do use a boxed mix. I don&#8217;t really like to buy the prepared angel food cakes already baked because they are never as high as the ones you make even from a box mix.<\/p>\n<p>This cake can also be served as a slice of cake with a large dollop of the orange custard sauce on top and then sprinkle with the toasted almonds.<\/p>\n<p>It was nice having family and friends enjoy this cake for Easter this year and the good thing too is that there is only one large slice left and that is going to work with me tomorrow so I&#8217;m not tempted to eat it.&nbsp;I think that&#8217;s one thing I have always enjoyed about catering and that is seeing people enjoy what I prepare for a party. Turn your cake upside down on a pepper sauce bottle and let it cool upside down. That will prevent the cake from falling.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2010\/04\/finished.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter sizes=\"(max-width: 448px) 100vw, 448px\" \/><\/a><\/p>\n<p>Using a serrated knife, split the cake into 3 slices.<\/p>\n<p><a class=\"wprm-recipe-ingredient-notes\">about 2 cups<\/span>\n\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t<\/ul>\n\t\t<\/div>\n\t \t \t<\/div>\n\t\t\t<div class=\"wprm-recipe-instructions-container\">\n\t\t<h3 class=\"wprm-recipe-header\">Instructions<\/h3>\n\t\t\t\t<div class=\"wprm-recipe-instruction-group\">\n\t\t\t\t\t\t<ol class=\"wprm-recipe-instructions\">\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p>Bake the angel food cake according to package directions. Cool and remove from pan then when cooled slice into three layers.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\"><p>Whip one cup of the whipping cream until stiff peaks have formed then refrigerate.<\/p><p>Filling: For the orange custard sauce heat 1\/4 cup of the orange juice in a double boiler. Add to the beaten egg yolk; put back in double boiler. Add in the sugar, cornstarch and 1 1\/4 cup remaining orange juice. Cook this mixture until it has thickened. Add in the butter and salt. Cool in refrigerator. When this has cooled completely fold in the whipping cream (the 1 cup you whipped earlier).<\/p><p>Whip the remaining 2 cups of whippcream cream with 4 Tablespoons of powdered sugar. Set aside.<\/p><p>To assemble cake put one layer on plate, top with about 1\/2 of the orange custard filling. Then add the second layer of angel food cake and the remaining orange custard filling. Top with the third layer of cake.<\/p><p>If there is any custard filling remaining in the bowl, I fold this into the whipping cream you have whipped to frost the cake with. Cover top and sides with the whipped cream and then sprinkle on the toasted almonds.
