I&#8217;ve never really been a feta cheese fan so why not trade out some good blue cheese; a little more tasty I think.<\/p>\n<p>I would love to have watermelon growing out on our property but we haven&#8217;t really started planning where a garden will be. We have so much sun now we could put it anywhere. So, when I can buy a good watermelon in the middle of summer I buy it knowing that it will probably be really juicy and bright red on the inside.<\/p>\n<p><!--more--><\/p>\n<p>I love arugula and I think it goes great with the watermelon. I always salt my watermelon when I eat it to bring out the sweetness (that&#8217;s what I tell myself) but I think the arugula will do the same thing for this melon. A little spinach and almonds (pistachios) can&#8217;t hurt either tied all together with a white balsamic dressing. (I could not find my almonds in my freezer so I substituted &nbsp;pistachio nuts which were great.)<\/p>\n<p>If you are looking for a very cool, refreshing, summery salad to make for your next party, give this a try and if you do, please leave a comment below and let me know what you though of the recipe.<\/p>\n<p><strong><span style=\"color: #800000;\">BLASTS FROM THE PAST:<\/span><\/strong> Speaking of watermelon, these <a href=\"https:\/\/rosemaryandthegoat.com\/?p=1171\" target=\"_blank\" rel=\"noopener\">Watermelon Cookies<\/a> (no watermelon in recipe) are a perfect little cookie for the summer.&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32206\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2024\/06\/IMG_5691-1-scaled-e1719341601703.jpg\" alt=\"\" width=\"500\" height=\"667\"\/><\/p>\n<p>I changed the nut from almond to pistachio. (I couldn&#8217;t make the change in below recipe though??)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32203\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2024\/06\/IMG_5693-scaled-e1721167923482.jpg\" alt=\"\" width=\"500\" height=\"667\"\/><\/p>\n<p>Mix your arugula and baby spinach in salad bowl. Remove any long stems from the spinach.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32208\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2024\/06\/IMG_5695-1-scaled-e1721167993282.jpg\" alt=\"\" width=\"500\" height=\"667\"\/>I added the onions to the bowl but then put the blue cheese and pistachios in separate containers until I was ready to dress the salad for dinner.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32209\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2024\/06\/IMG_5724-scaled-e1721168062786.jpg\" alt=\"\" width=\"500\" height=\"667\"\/><\/p>\n<p>When ready to serve add the watermelon that you have cut in about 1\/2&#8243; cubes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32210\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2024\/06\/IMG_5725-scaled-e1721168114575.jpg\" alt=\"\" width=\"500\" height=\"667\"\/><\/p>\n<p>Top with pistachios and then the blue cheese crumbles.
