{"id":22425,"date":"2018-05-19T05:00:32","date_gmt":"2018-05-19T12:00:32","guid":{"rendered":"http:\/\/rosemaryandthegoat.com\/?p=22425"},"modified":"2019-10-18T10:03:07","modified_gmt":"2019-10-18T17:03:07","slug":"blueberry-lemon-cake","status":"publish","type":"post","link":"https:\/\/rosemaryandthegoat.com\/?p=22425","title":{"rendered":"Blueberry Lemon Cake"},"content":{"rendered":"<p><span style=\"color: #800000;\"><strong>Lemon and blueberry, great combination.<\/strong><\/span><\/p>\n<p>Blueberries and Lemon go hand in hand for a great flavor combination.<\/p>\n<p>I&#8217;ve done a blueberry coffee cake before but I can&#8217;t say that this is a coffee cake. Put a big dollop of whipped cream beside it and it makes a great dessert. Serve it for brunch, lunch or dinner; you will enjoy it.<\/p>\n<p>The only thing I did wrong with this cake was to over bake it. And, that&#8217;s my fault. I kept testing it and even though the recipe called to still have a few moist crumbs sticking to the cake tester I continued to bake it. I must have had a brain freeze for a moment or two.<\/p>\n<p>I love making one layer cakes because there&#8217;s never a lot left over to tempt you to keep going back for more. Some cakes I have made live on in my freezer for a couple of months. They get cut into thin slices and wrapped for my husband&#8217;s sweet cravings.<\/p>\n<p><!--more--><\/p>\n<p>It&#8217;s almost getting blueberry picking season. When I catered I use to head out to the blueberry\/blackberry patches and pick about 20 lbs. of berries that I would use for making muffins and other desserts. But now, I wait for one of the local groceries to run them for $1\/pkg. and I stock up for my freezer. I love blackberries and raspberries frozen but I prefer my blueberries fresh. I have to tell you about a &#8220;lite&#8221; dessert I make sometimes with frozen blueberries. You take out some fresh frozen blueberries, add a little sweetener (I use Stevia) and quickly add some milk, stir and the milk starts to freeze and is almost (use your imagination now) like blueberry ice cream.<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST:<\/strong> <\/span>Looking for a quick little appetizer to have around once you start having your outdoor parties. Well, my <a href=\"http:\/\/rosemaryandthegoat.com\/2009\/06\/06\/proscuitto-and-gruyere-pinwheels\/\">Prosciutto and Gruyere Palmiers <\/a>are great to have in the freezer for unexpected drop in guest.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-22478\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2018\/04\/IMG_9718-e1523653459282.jpg\" alt=\"IMG_9718\" width=\"500\" height=\"667\"\/><\/p>\n<p>Fresh blueberries and lemon and a few other ingredients.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-22479\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2018\/04\/IMG_9721-e1523653521292.jpg\" alt=\"IMG_9721\" width=\"500\" height=\"667\"\/><\/p>\n<p>Beat the 2 eggs and 1 cup of sugar for five minutes then add the sour cream, oil, vanilla and salt. Mix well.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-22480\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2018\/04\/IMG_9722-e1523656933387.jpg\" alt=\"IMG_9722\" width=\"500\" height=\"667\"\/><\/p>\n<p>Add in the dry ingredients 1\/3 at a time. Do not over mix.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-22481\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2018\/04\/IMG_9723-e1523657098931.jpg\" alt=\"IMG_9723\" width=\"500\" height=\"667\"\/><\/p>\n<p>Toss the blueberries with 1\/2 tablespoon of cornstarch and the lemon juice.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-22482\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2018\/04\/IMG_9726-e1523657120114.jpg\" alt=\"IMG_9726\" width=\"500\" height=\"667\"\/><\/p>\n<p>Pour half the batter on bottom of pan to cover bottom.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-22483\" class=\"blog-yumprint-method-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">Instructions<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Lightly butter a 9-inch springform pan. Preheat Oven to 375\u02daF.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">Cake<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Beat 2 eggs and 1 cup sugar with whisk attachment on high speed 5 minutes, or until light in color and thick.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Add 1 cup sour cream, \u00bd cup oil, 1 teaspoon vanilla, \u00bc tsp salt and whisk on low speed until well combined.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Whisk together the 2 cups flour with 2 teaspoons  baking powder then add to batter \u2153 at a time, whisking to incorporate with each addition (DO NOT OVERMIX). Finally, add 1 tablespoon lemon juice and \u00bd tablespoon zest.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Rinse blueberries and drain well. In a medium bowl, toss blueberries with \u00bd tablespoon cornstarch and 1 tsp lemon juice, stirring until well combined and no dry white cornstarch remains.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Pour half of batter into prepared springform pan and spread evenly. Top with half of the blueberries. Spread with remaining batter then sprinkle the rest of the blueberries evenly over the top, pushing them slightly into the batter (about halfway). Bake at 375\u02daF for 45 to 55 minutes or until a toothpick inserted in center comes out clean. (Be careful not to over bake, mine got a little too brown on bottom. Let cake rest in the pan 15-20 min then remove ring and cool until room temp or just warm.
