Of course the kids did well first trip out and by end of trip, the Isler&#8217;s were taking them on blue (maybe even black) slopes. Me, on the other hand, had my leg wrapped around a tree the first day and being stubborn like I was (am), refused help down the mountain by the ski patrol &#8212; now that would have been a little too embarrassing. And to make matters worse, I couldn&#8217;t ruin my first day, so the rest of the day I spend on the bunny slope being pulled up by a rope and making my way down the tiny little hill.<\/p>\n<p>Needless to say, by the end of the trip I couldn&#8217;t put my leg on the ground because a piece of the cartilage was caught between the joint. So, did I ever ski again? Once? And after that I stuck to snow mobiles and shopping and now with two fairly new knees I would never attempt those slopes again.<\/p>\n<p><!--more--><\/p>\n<p>So, shopping brings me to this recipe. While filling my day with shopping and cooking for the family (my favorite part anyway &#8212; I should rent myself out.) I found some wonderful shops and on a trip to Breckenridge found the <a href=\"https:\/\/www.amazon.com\/Colorado-Cookbook-Celebrating-Culinary-Artistry\/dp\/0960394621\/ref=sr_1_1?ie=UTF8&amp;qid=1507577279&amp;sr=8-1&amp;keywords=creme+de+colorado+cookbook\">Creme de Colorado <\/a>cookbook and eventually found my way to this recipe which I used for many years when I catered.<\/p>\n<p>These are kind of like an Almond Joy candy bar and brownie had an offsprings named &#8212; delicious, chocolate and coconutty. They freeze very well too; so if you&#8217;re looking for a sweet to have on hand during the holidays this year, give these a try and you will love the results.<\/p>\n<p>(<strong>Note<\/strong> &#8212; I reconnected with Mary Jo through Facebook a few years ago and learned that her granddaughter, Samantha Isler is an actress. Look her up on IMDB you may have seen some of her movies.)<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST<\/strong><\/span>: This <a href=\"http:\/\/rosemaryandthegoat.com\/2016\/08\/06\/coconut-chocolate-raspberry-squares\/\">Coconut Chocolate Raspberry Square<\/a> recipe was also another catered favorite of mine and also freezes very well.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21735\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7563-e1507741615387.jpg\" alt=\"IMG_7563\" width=\"500\" height=\"667\"\/><\/p>\n<p>The &#8220;M&#8221; is for mmmmm, good.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21736\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7537-e1507741646784.jpg\" alt=\"IMG_7537\" width=\"500\" height=\"667\"\/><\/p>\n<p>You probably have all the ingredients in your pantry. So get busy and whip up this recipe.<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21745\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7542-e1507741781151.jpg\" alt=\"IMG_7542\" width=\"500\" height=\"667\"\/><\/p>\n<p>After you mix the base of the bar, spread it evenly into a pan that has been greased or use cooking spray.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21737\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7543-e1507742111909.jpg\" alt=\"IMG_7543\" width=\"500\" height=\"734\"\/><\/p>\n<p>Mix the sweetened condensed milk and the coconut together.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21738\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7547-e1507742154429.jpg\" alt=\"IMG_7547\" width=\"500\" height=\"667\"\/><\/p>\n<p>Spread this mixture onto the BAKED bottom layer.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21739\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7551-e1507742205495.jpg\" alt=\"IMG_7551\" width=\"500\" height=\"667\"\/><\/p>\n<p>While the coconut layer bakes, mix up the frosting.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21740\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7552-e1507742237928.jpg\" alt=\"IMG_7552\" width=\"500\" height=\"667\"\/><\/p>\n<p>Bake the coconut layer until golden brown, then remove from oven.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21741\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7554-e1507742267784.jpg\" alt=\"IMG_7554\" width=\"500\" height=\"667\"\/><\/p>\n<p>Put dabs of the chocolate frosting over the top of the hot coconut layer.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-21742\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/10\/IMG_7555-e1507742313961.jpg\" alt=\"IMG_7555\" width=\"500\" height=\"667\"\/><\/p>\n<p>Smooth the frosting to cover the entire surface. Beat in eggs. Stir in cocoa, flour and nuts. Mix well. Spread batter evenly into greased and floured 9 x 13 \u201c metal pan. Bake at 350 degrees for 20 minutes. In a small bowl, mix condensed milk and coconut. Spread on top of crust and bake an additional 18-20 minutes. Frost immediately. When cool, cut into squares.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Frosting: In top of double boiler over simmering water, melt the chocolate and butter, stirring until smooth. Add powdered sugar, milk and vanilla.
