{"id":20402,"date":"2017-04-18T05:00:26","date_gmt":"2017-04-18T12:00:26","guid":{"rendered":"http:\/\/rosemaryandthegoat.com\/?p=20402"},"modified":"2019-10-18T11:33:03","modified_gmt":"2019-10-18T18:33:03","slug":"raspberry-and-pistachio-cobbler","status":"publish","type":"post","link":"https:\/\/rosemaryandthegoat.com\/?p=20402","title":{"rendered":"Raspberry and Pistachio Cobbler"},"content":{"rendered":"<p><span style=\"color: #800000;\"><strong>Finished off all those raspberries.<\/strong><\/span><\/p>\n<p>With summer almost here and all those berries starting to come in season, ya need to put this on your list of things to try; especially if you need a good cobbler type dessert to throw together to take to a gathering of friends.<\/p>\n<p>I love to pick my own berries and hoping timing is right this year for us to be around when blackberries, strawberries and raspberries are in season for the picking. I&#8217;ve given up on picking blueberries or at least to freeze them because I don&#8217;t care for them once they are frozen. I guess they are ok in blueberry muffins or bread or cobbler but I don&#8217;t like to eat them frozen like I do the other berries.<\/p>\n<p><!--more--><\/p>\n<p>The pistachios are so good in this cobbler; don&#8217;t think I&#8217;ve ever used that nut in a topping for cobblers before. Any kind of fruit can be used in this but I did berries because that&#8217;s what I had in my freezer and I was trying to get rid of some of it to make room for this season&#8217;s fruit.<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST:<\/strong><\/span> These <a href=\"http:\/\/rosemaryandthegoat.com\/2010\/11\/12\/pepperoni-olive-kebab\/\">Pepperoni Olive Kebabs <\/a>are the easiest appetizer ever. Read and look at the olives we saw while in Spain.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-20458\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/01\/IMG_1805-e1483742363940.jpg\" alt=\"img_1805\" width=\"500\" height=\"667\"\/><\/p>\n<p>Put all your fruit into a oven proof dish.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-20460\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/01\/IMG_1807-e1483742302675.jpg\" alt=\"img_1807\" width=\"500\" height=\"667\"\/><\/p>\n<p>Sprinkle the flour and sugar over the berries and gently toss.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-20462\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/01\/IMG_1808-e1483742345712.jpg\" alt=\"img_1808\" width=\"500\" height=\"667\"\/><\/p>\n<p>Mix the oats, brown sugar, flour, pistachios and the melted butter. Mix everything with a fork and sprinkle on top of the berries. Bake at 350\u00b0 for 30-40 minutes or until brown and bubbly.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-20463\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2017\/01\/IMG_1811-e1483742454221.jpg\" alt=\"img_1811\" width=\"500\" height=\"667\"\/><\/p>\n<p>Serve with whipped cream or ice yumprintitem=\"2\" itemprop=\"ingredients\">1\/2 c. all purpose four<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"3\" itemprop=\"ingredients\">3\/4 c. oats<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"4\" itemprop=\"ingredients\">1\/2 c. pistachios<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"5\" itemprop=\"ingredients\">1\/2 tsp. cinnamon<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">Instructions<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Preheat oven to 350\u00b0. lightly grease square or other baking dish that will hold all your fruit and set aside.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">In a large bowl mix all the fruit and other ingredients for the cobbler. Try not to break up the raspberries. Pour into the prepared baking dish.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">In another bowl, mix all the topping ingredients until moist. Sprinkle over fruit and then top and bake for 30-40 minutes or until bubble and brown. Remove from over and serve with ice cream or whipped cream.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-note-section\" yumprintsection=\"3\">\t\t\t<div class=\"blog-yumprint-subheader\">Notes<\/div>\t\t\t<ol class='blog-yumprint-notes'>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"0\">You can use all raspberries or add in some peaches or other fruits.
