{"id":18782,"date":"2016-06-01T05:00:04","date_gmt":"2016-06-01T12:00:04","guid":{"rendered":"http:\/\/rosemaryandthegoat.com\/?p=18782"},"modified":"2019-10-18T12:17:08","modified_gmt":"2019-10-18T19:17:08","slug":"raspberry-applesauce-cake","status":"publish","type":"post","link":"https:\/\/rosemaryandthegoat.com\/?p=18782","title":{"rendered":"Raspberry Applesauce Cake"},"content":{"rendered":"<p><span style=\"color: #800000;\"><strong>The kids are all gone!<\/strong><\/span><span style=\"color: #800000;\"><strong>\ud83d\ude41<\/strong><\/span><\/p>\n<p>What do you do with all that special &#8220;grandkid&#8221; friendly food after they leave?<\/p>\n<p>My refrigerator and pantry are always packed with things like applesauce, some good yogurt, some organic meat of some sort, lots of fruit, string cheese of course and lots of other things that I may not be eating if it is left over. As always, I buy way too much. But who wants to run out of food or goodies when the kids are visiting. I usually love the non-so-good-for-you-foods like Goldfish, popsicles, ice cream cups with about 6 kinds of sprinkles, and drink boxes (organic juice of course).<\/p>\n<p>So recently my daughter was home for the weekend; and they had friends and kids at our house, so that meant stock up on some &#8220;stuff&#8221; for them to eat since they may not want to be eating the paella that we made one night.<\/p>\n<p>On Monday, when the house was all empty except for the two of us, I decided to take on the bulging refrigerator. First, I threw all the fruit into my dehydrator, peeled and individually wrapped my bananas (they are like eating banana popsicles), threw some sweet stuff away. But, then there are the cartons of applesauce staring at me and I don&#8217;t even like applesauce.<\/p>\n<p><!--more--><\/p>\n<p>After googling what to do with leftover apple sauce I came up with a glaze for pork chops (sounds too much like a Fall entree) and this applesauce cake recipe that came from a newspaper years ago; so I decided on this recipe for repurposing some of that sauce with the addition of some of my hoarded frozen raspberries that I bought last year.<\/p>\n<p>Once some of my leftover organic chicken dinosaur nuggets became <a href=\"http:\/\/rosemaryandthegoat.com\/2013\/02\/06\/sweet-and-sour-dinosaurs\/\">Sweet and Sour Dinos<\/a>. Put the eggs in one at a time and beat after each addition. (I got in a hurry and put them both in at once.) Add half of the flour mixture and beat.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7795-e1464724556728.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18791\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7795-e1464724556728.jpg\" alt=\"IMG_7795\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Add in the applesauce and then the remainder of the flour mixture.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7794-e1464724485716.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18790\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7794-e1464724485716.jpg\" alt=\"IMG_7794\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7796-e1464724915233.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18793\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7796-e1464724915233.jpg\" alt=\"IMG_7796\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Fold in the raspberries.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7797-e1464724358653.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18794\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7797-e1464724358653.jpg\" alt=\"IMG_7797\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Spray a 9 x 13&#8243; baking pan with oil and spoon in your batter, smooth to even out. Bake at 350\u00b0 for about 30 minutes or until tooth pick insert in center comes out clean.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7809-e1464724610543.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18797\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7809-e1464724610543.jpg\" alt=\"IMG_7809\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>While cake is cooling a little, mix up the frosting\/glaze.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7803-e1464724643550.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18795\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7803-e1464724643550.jpg\" alt=\"IMG_7803\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Brown the butter slowly in a small skillet until it starts to smell nutty and turns a dark golden brown. Be careful not to burn it.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7806.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18796\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7806-e1464724688216.jpg\" alt=\"IMG_7806\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Add the brown butter to the powdered sugar with the cinnamon and mix to spreading consistency. You may need to add a tiny bit of water to thin out.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/05\/IMG_7812-e1464724756867.jpg\"><img loading=\"lazy\" mixture alternately with the applesauce in two additions. Beat well between each addition.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Add vanilla and spices and beat one more minute.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Have ready a greased 10x15 pan (sorry I was wrong about the 9x9). Pour in batter and bake at 375 for 30 minutes. Cool in pan and then ice.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"5\">To make icing, place butter in heavy pan and melt until light brown. Remove, add sugar and cinnamon and stir, adding hot water a bit at a time until mixture is of a spreading consistency.
