{"id":18515,"date":"2016-05-21T05:00:21","date_gmt":"2016-05-21T12:00:21","guid":{"rendered":"http:\/\/rosemaryandthegoat.com\/?p=18515"},"modified":"2019-10-18T12:20:53","modified_gmt":"2019-10-18T19:20:53","slug":"fiesta-catfish-with-guacamole","status":"publish","type":"post","link":"https:\/\/rosemaryandthegoat.com\/?p=18515","title":{"rendered":"Fiesta Catfish with Guacamole"},"content":{"rendered":"<p><span style=\"color: #800000;\"><strong>I had to convince my husband to try this combination<\/strong><\/span>.<\/p>\n<p>Sometime back in May with Cinco de Mayo behind us I was thinking about Mexican flavors and how they would fit into a catfish recipe.<\/p>\n<p>Growing up the only way we ate catfish was fried. In my opinion, that is the best way to eat catfish. Although, lately I have been coating it and baking it in the oven and I have to say it is almost as good as deep-fried. Still crunchy like fried but not nearly as many calories since it isn&#8217;t swimming in oil.<\/p>\n<p>My first thoughts were to put in some Mexican seasonings like cumin and chili powder then I got carried away and added some garlic powder, cayenne and paprika. Very tasty. There were also a few avocados lying around just waiting to be made into some good guacamole so after it&#8217;s made and the fish is done I added some to the tops of the crunchy, out of the oven catfish filets along with a sliver of tomato.<\/p>\n<p><!--more--><\/p>\n<p>Of course, my husband&#8217;s first comment was he didn&#8217;t want it on top of his fish. (or more) cayenne pepper<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"7\" itemprop=\"ingredients\">1\/4 tsp. paprika<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"8\" itemprop=\"ingredients\">salt and pepper to taste<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">Guacamole<\/div>\t\t\t<ol class='blog-yumprint-ingredients'>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">2 avocados<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">1\/2 small red onion, finely copped<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"2\" itemprop=\"ingredients\">1-2 jalapeno peppers, seeded and finely chopped<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"3\" itemprop=\"ingredients\">juice of one lime<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"4\" itemprop=\"ingredients\">1\/2 c. chopped cilantro<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"5\" itemprop=\"ingredients\">1-2 cloves garlic, finely minced<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">Instructions<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Preheat oven to 400\u00b0.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Rinse and pat dry the catfish fillets. Set aside.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Mix the cornmeal with all the spices together. Put the fish fillets into the mixture and pat to put a coating on all sides of the fish. Set aside.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Coat a baking pan with cooking spray.
