{"id":18351,"date":"2016-02-29T05:00:06","date_gmt":"2016-02-29T12:00:06","guid":{"rendered":"http:\/\/rosemaryandthegoat.com\/?p=18351"},"modified":"2024-11-11T17:46:58","modified_gmt":"2024-11-12T00:46:58","slug":"cruciferous-chicken-crunch","status":"publish","type":"post","link":"https:\/\/rosemaryandthegoat.com\/?p=18351","title":{"rendered":"Cruciferous Chicken Crunch"},"content":{"rendered":"<p><span style=\"color: #800000;\"><strong>This is Cruiciferous!<\/strong><\/span><\/p>\n<p>Ok, you are probably not like me and thought that Cruiciferous is another word for delicious or stupendous or another word for boy is that delicious.<\/p>\n<p>I&#8217;m always on the lookout for some new green veggie combination and when I first ran across this bag of veggies at Trader Joe&#8217;s I thought they were just salad ingredients but upon reading the bag I saw that the veggie blend could be used in saut\u00e9s also. Here&#8217;s what I did one day for lunch then improved upon it the next time I used the bag of veggies.<\/p>\n<p>So my first attempt was to throw it in a skillet with a tiny bit of oil, some garlic and onion powder and after it was cooked for a few minutes I added some chopped smoked chicken thighs I had left over in the refrigerator; it was so good that I told myself that I could easily eat this every day for lunch and what a great &#8220;green&#8221; thing to make for St. Patrick&#8217;s Day.<\/p>\n<p>My second attempt was even better. I used about 1 teaspoon of sesame oil along with 1 tablespoon of olive oil, saut\u00e9ed the veggies, added in the chicken as I did the first time along with about 1 tablespoon of soy sauce and then sprinkled in some sesame seeds at the end. I&#8217;m giving you the second version recipe but know if you just want to throw it in a skillet, saut\u00e9, add some chicken, it is still delicious.<!--more--><\/p>\n<p>If you are looking for this at Trader Joe&#8217;s it is called Cruciferous Crunch Collection. Crunch, maybe because all the veggies are crunchy if you don&#8217;t cook them too long. If you can&#8217;t find this use a mixture of kale, Brussels sprouts, broccoli, green and red cabbage all kind of shredded into strips.<\/p>\n<p>Oh, by the way Cruiciferous doesn&#8217;t describe the taste of these vegetables; all these vegetables are Cruciferous vegetables, of the family Brassicacea, and usually are raised as cauliflower, cabbage, cress, bok choy, broccoli, and Brussel sprouts. All of these vegetables are high in vitamin C and soluble fiber. If you want to see the whole list of Cruiciferous vegetables, look <a href=\"https:\/\/en.wikipedia.org\/wiki\/Cruciferous_vegetables\">here<\/a> at Wikipedia. So this is a a stupendously delicious bunch of cruciferous vegetables and you just have to try it.<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST:<\/strong> <\/span> Want a quick little slider for a party or just about anytime. Then add whatever else you want.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/02\/IMG_4759-e1454950197547.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18362\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/02\/IMG_4759-e1454950197547.jpg\" alt=\"IMG_4759\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Add a little oil (sesame and olive) to the skillet, give the veggies a stir for 4-5 minutes then add in your chicken. I also added in some garlic powder and onion powder. The second time I made this I added a little spinach and a little soy sauce. It just keeps evolving into something I could eat everyday.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2016\/02\/IMG_4760-e1454950323664.jpg\"><img loading=\"lazy\" heat until hot. Add all the vegetables and quickly stir until they are starting to cook. This may take 4-5 minutes. You want them to remain a little crunchy.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Add in the garlic powder and onion powder. Toss in the chopped chicken thigh meat and add a splash of soy sauce.
