Maybe we will have to go there and try this dish first hand.<\/p>\n<p>This recipe comes from <a href=\"https:\/\/greatlakesbetterfood.blogspot.com\/2012\/06\/keepin-it-real-peruvian-pollo-la-brasa.html\">Great Lakes Better Food <\/a>website. I have no idea how I happened upon it; maybe when I was looking for chicken recipes to do in our new outdoor kitchen that is in the process of being built.<\/p>\n<p>The spices in this recipe took a little tracking down; I found the <a href=\"https:\/\/www.amazon.com\/Incas-Food-Aji-Amarillo-Paste\/dp\/B003G52K5E\/ref=sr_1_1?ie=UTF8&amp;qid=1431790036&amp;sr=8-1&amp;keywords=Aji+Amarillo+paste\">Aji Amarillo paste <\/a>at Whole Foods, the <a href=\"https:\/\/www.amazon.com\/Goya-Foods-Culantro-Achiote-1-41-Ounce\/dp\/B008BRLNAA\/ref=sr_1_2?ie=UTF8&amp;qid=1431790069&amp;sr=8-2&amp;keywords=achiote+seasoning\">achiote seasoning<\/a> at a small Mexican grocery (although I later found at our HEB) and the huacatay paste (black mint) on Amazon. (All of these can be bought on Amazon.) Believe me, this recipe is worth all that trouble. And besides, my husband did the hard work of cooking the chickens.<\/p>\n<p><!--more--><\/p>\n<p>The prep work on this is simple, mix all the spices\/paste and rub down the bird and grill on a rotisserie. Evidently the <a href=\"https:\/\/www.amazon.com\/Huacatay-Black-Mint-Incas-Food-Producto\/dp\/B006C84MKI\/ref=sr_1_1?ie=UTF8&amp;qid=1431789651&amp;sr=8-1&amp;keywords=huacatay\">huacatay<\/a> is the mystery herb in this whole recipe. If you don&#8217;t have a rotisserie to your grill, don&#8217;t worry, just cut the chicken down the back, cut out the backbone, if you wish, and flatten it out and grill. This is so simple to make once you track down all your spices.<\/p>\n<p>The recipe for green sauce comes from Andrea Lynn at <a href=\"https:\/\/www.seriouseats.com\/2010\/03\/peruvian-aji-amarillo-green-sauce-recipe-pio-pio-restaurant-nyc.html?ref=obnetwork\">Seariouseats.com <\/a>and she says it is a must for serving with this grilled chicken.<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST: <\/strong><span style=\"color: #000000;\">This <a href=\"http:\/\/rosemaryandthegoat.com\/2014\/06\/19\/spicy-honey-glazed-chicken\/\">Spicy Honey Glazed Chicken<\/a> is another recipe that would work on the grill for your summer parties. (I did overnight.)<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Put the chicken on your rotisserie rod or if you don't have a rotisserie to your grill, split the chicken up the back and remove the backbone and then press on the chicken to spread it out.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Cook until chicken registers 165\u00b0.<\/li>\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Serve with Green Peruvian Aji Sauce (recipe below)<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-note-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">Notes<\/div>\t\t\t<ol class='blog-yumprint-notes'>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"0\">Green Peruvian Dipping Sauce<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"1\">2 fresh jalape\u00f1os, including seeds and ribs, roughly chopped<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"2\">1 Tbsp. aji Amarillo paste<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"3\">1 c. cilantro leaves and small stems<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"4\">2 Tbsp. grated cotija cheese or Parmesan cheese<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"5\">1 Tbsp. vegetable oil<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"6\">1 tsp. white vinegar<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"7\">1\/2 tsp. juice from 1 lime<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"8\">1\/2 c. mayonnaise<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"9\">Kosher salt and freshly ground black pepper<\/li>\t\t\t\t<li class=\"blog-yumprint-note-item\" yumprintitem=\"10\">Combine jalape\u00f1os, aji amarillo, cilantro, cotjia, garlic, oil, vinegar, and lime juice in a blender. Blend on high speed until smooth paste forms. Add mayonnaise and blend until homogenous. Transfer to a bowl and season to taste with salt and pepper. Serve with grilled chicken.
