The frozen fruit will remind you of what you want to leave behind and that you are ready to move on to Spring. And the warm white chocolate smoothly flowing over and coating the frozen fruit, thawing it has it runs down the dish, should bring promise of all that melting snow you may be experiencing now. So, a little bit of winter, hopefully in our rear view mirrors, and Spring ahead of us.<\/p>\n<p>What would I do without Ina Garten. I love watching her show and watching her gather her ingredients at her local markets. I had this dessert at my friend, Peggy&#8217;s, and knew I would be making it again; and I did, again, and again, and again. You can change up your fruits. My favorites are raspberries, blueberries, cherries, and blackberries. Any fruits can be used, just make sure you freeze them. (Strawberries freeze a little too hard for me, almost like ice cubes.)<\/p>\n<p>The day I served this to my craft circle group (only seven of us in my section) I used frozen cherries, peaches, blueberries, strawberries and raspberries. Anyone that can&#8217;t eat the seeds simply use fruits without seeds like the cherries and peaches.<\/p>\n<p><!--more--><\/p>\n<p>Keep these ingredients in your freezer\/pantry and you can whip up a delicious dessert for any time you want to throw together a quick dessert, winter or summer.<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST<\/strong><\/span>: <a href=\"http:\/\/rosemaryandthegoat.com\/2010\/12\/12\/irish-cream-cheesecake\/\">Irish Cream Cheesecake<\/a> is one of the most delicious cheesecakes I have made. It has white chocolate in the filling along with the Irish Cream and also grated white chocolate on top of the finished cheesecake. I think the flavor of the Bailey&#8217;s Irish Cream put this dessert over the top in deliciousness.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/02\/IMG_8615-e1424364421119.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16949\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/02\/IMG_8615-e1424364421119.jpg\" alt=\"IMG_8615\" width=\"500\" height=\"587\"\/><\/a><\/p>\n<p>Make sure you use a good white chocolate. Do not use the squares of almond bark.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/02\/IMG_8641-e1424364483277.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16950\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/02\/IMG_8641-e1424364483277.jpg\" alt=\"IMG_8641\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>This will not be a thick sauce so don&#8217;t wait until it thickens, it won&#8217;t. Pouring it over the frozen fruits thickens and coats the fruit. Also, if you use a clear vanilla, it will stay a whiter color; I did not have any the day I made this.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/02\/IMG_8643-e1424364581497.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16951\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/02\/IMG_8643-e1424364581497.jpg\" alt=\"IMG_8643\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>I divided my fruit into individual portions and put in plastic bags that way I could quickly get the fruit out, put in dish before it thaws too quickly.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/03\/IMG_8667.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16964\" Chocolate:<\/strong>\u00a0Place your finely chopped white chocolate in a heat-proof glass or stainless steel bowl.<\/p><p><strong>Infuse the Cream:<\/strong>\u00a0In a small saucepan, combine the heavy cream and the orange zest. Heat over medium-low just until it begins to\u00a0<strong>simmer<\/strong>\u00a0(bubbles forming around the edges). Do not let it come to a rolling boil.<\/p><p><strong>The &quot;Bloom&quot;:<\/strong>\u00a0Pour the hot cream directly over the chopped chocolate. Let it sit untouched for\u00a0<strong>3 full minutes<\/strong>. This allows the chocolate to melt gently without being agitated into a grainy mess.<\/p><p><strong>Emulsify:<\/strong>\u00a0Using a small whisk or a spatula, start stirring in small circles in the center of the bowl, gradually moving outward.\u00a0The mixture will transform from &quot;milky&quot; to a glossy, pale-gold sauce.<\/p><p><strong>Finish:<\/strong>\u00a0Stir in the orange liqueur (if using), vanilla, and that pinch of salt.<\/p><p><strong>Keep Warm:<\/strong>\u00a0Keep the sauce in a warm spot (or in a bowl over a pot of warm water) until you are ready to serve.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">About 5 minutes before serving, remove the berries from the freezer and place them on individual serving plates. I used frozen peaches, blueberries, raspberries, strawberries and cherries. I do not like the way strawberries freeze. They are like little ice cubes. I would recommend not doing those.
