{"id":16617,"date":"2015-12-16T05:00:18","date_gmt":"2015-12-16T12:00:18","guid":{"rendered":"http:\/\/rosemaryandthegoat.com\/?p=16617"},"modified":"2024-10-18T11:11:30","modified_gmt":"2024-10-18T18:11:30","slug":"cornbread-and-buttermilk-soup","status":"publish","type":"post","link":"https:\/\/rosemaryandthegoat.com\/?p=16617","title":{"rendered":"Cornbread and Buttermilk Soup"},"content":{"rendered":"<p><span style=\"color: #800000;\"><strong>Now this is a first for me!<\/strong><\/span><\/p>\n<p>In my opinion, <a href=\"https:\/\/www.rhubarbasheville.com\">Rhubarb<\/a> restaurant is one of the best we dined at while visiting in Asheville last year.<\/p>\n<p>The <a href=\"https:\/\/gardenandgun.com\/blog\/year-restaurants-rhubarb\">recipe<\/a> for their Buttermilk Soup with Cornbread (the cornbread is actually crumbled in the soup and pureed) appeared in <a href=\"https:\/\/gardenandgun.com\">Garden and Gun<\/a> magazine a while back and I couldn&#8217;t resist trying it. Although, my first instinct was &#8220;yuck&#8221; I read the recipe and thought I should give it a try before turning the page on yet another recipe that I might have liked if only I&#8217;d given it a chance.<\/p>\n<p>I&#8217;ve probably told this story before and if I have maybe you didn&#8217;t read it. My grandfather loved buttermilk and it wasn&#8217;t the low-fat kind it was the kind that was full fat and came out in big blobs when poured into his glass. Now that doesn&#8217;t sound appetizing at all and it certainly doesn&#8217;t make you want to run to the store to buy some buttermilk to make this soup. Anyway, he would pour his thick buttermilk into his goblet type glass and then he would crumble his cornbread in the glass and eat this with a spoon.<\/p>\n<p><!--more--><\/p>\n<p>Maybe the chef at Rhubarb Restaurant had a grandparent who loved buttermilk and just happened to put cornbread in it and this is how this recipe came about.<\/p>\n<p>We decided to do a modern take on some Southern menu items for our Friday night dinner after Thanksgiving. So, in memory of my grandfather, I made the Buttermilk Soup with Cornbread as an amuse bouche for my contribution to the night&#8217;s menu. My little espresso cups worked perfect for the soup I wasn&#8217;t sure anyone would like &#8212; they surprised me and said they liked the soup. A little twang but different and good, especially with the cornbread sticks and topped with some fried pork belly.<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST: <\/strong><span style=\"color: #000000;\">This little <a href=\"http:\/\/rosemaryandthegoat.com\/2010\/07\/16\/pepperoni-stuffed-black-olives\/\">Pepperoni Stuffed Olive<\/a> is an appetizer I use to make at least a hundred of for parties when I catered. It&#8217;s like eating a mini antipasto plate in one bite.<\/span><\/span><\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3531-e1448905100647.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18036\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3531-e1448905100647.jpg\" alt=\"IMG_3531\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Cornbread ready to go in the oven.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3538-e1448905167270.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18037\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3538-e1448905167270.jpg\" alt=\"IMG_3538\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Sweet the leeks until almost translucent.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3543-e1448905241498.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18038\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3543-e1448905241498.jpg\" alt=\"IMG_3543\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Add the chicken broth to the soup and then the crumbled cornbread. Then this get blend using a blender or stick blender.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3579-e1448905337579.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18039\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3579-e1448905337579.jpg\" alt=\"IMG_3579\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>I had chilled the soup after blended and right before serving I added the room temperature buttermilk and heated gently; do not boil.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3603-e1448905424444.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18040\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3603-e1448905424444.jpg\" alt=\"IMG_3603\" width=\"500\" height=\"667\"\/><\/a><\/p>\n<p>Pour the heated soup into small cups or bowls and garnish with either some bacon crumbs, green onions or some more crumbled cornbread.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2015\/11\/IMG_3614-e1448905512186.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-18041\" class=\"blog-yumprint-ingredient-item\" yumprintitem=\"10\" itemprop=\"ingredients\">2 stalks celery, sliced into \u00bc-inch pieces<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"11\" itemprop=\"ingredients\">3\/4 cup leeks, washed and sliced in \u00bc inch half moons<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"12\" itemprop=\"ingredients\">1 clove garlic, thinly sliced<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"13\" itemprop=\"ingredients\">6 cups chicken stock<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"14\" itemprop=\"ingredients\">1 \u00bc cups cornbread, crumbled<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"15\" itemprop=\"ingredients\">3 cups room-temperature buttermilk<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"16\" itemprop=\"ingredients\">Salt and pepper<\/li>\t\t\t\t<li class=\"blog-yumprint-ingredient-item\" yumprintitem=\"17\" itemprop=\"ingredients\">\u00bd cup heavy cream (optional)<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">For cornbread<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Preheat an 8-inch cast-iron pan in a 400-degree oven. Combine dry ingredients in one bowl, and buttermilk, eggs, and butter in another. Then combine both wet and dry ingredients and mix well to form a batter. Add bacon fat to the skillet, swirl to melt, then add batter and bake at 400 degrees for 10 minutes or until golden brown. Remove, cool, and set aside for soup.<\/li>\t\t\t<\/ol>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">For Soup<\/div>\t\t\t<ol class=\"blog-yumprint-methods\" itemprop=\"recipeInstructions\">\t\t\t\t<li class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Heat peanut oil in a heavy bottomed saucepot and sweat celery and leeks until translucent. Add garlic. Saut\u00e9 for 1 minute more, then add chicken stock, cornbread, salt, and pepper. Simmer for approximately 30 minutes. Remove from heat and puree in batches, using a variable-speed Vitamix or short pulses in a standard blender to avoid an explosion. Combine buttermilk and heavy cream. If storing soup for use the next day, whisk in buttermilk\/cream mixture and let cool. If serving soup immediately, return pureed soup base to sauce pot, whisk in buttermilk mixture, and gently bring to serving temperature. Real buttermilk does not like to be heated above 180 degrees, so be careful.
