Besides putting it in chicken salad for sandwiches (which I&#8217;m not crazy about) I don&#8217;t really know what to do with it. We did add it to our herb garden this year but I have to admit I just watered it and looked how pretty it was growing but never got out and snipped a little for a dish. (*NOTE&#8211; big confession below.)<\/p>\n<p>One night in Vancouver CA (hub) had that wonderful<a href=\"http:\/\/rosemaryandthegoat.com\/2014\/08\/18\/green-pea-risotto-with-pan-seared-halibut\/\"> Green Pea Risotto<\/a> with pan seared Halibut; I had scallops and tiger prawns with a chili citrus butter sauce and it was perched on top of Israeli couscous. Normally I feel like I can pick out all flavors in a dish. Every bite I took of this dish got better and better, and I could never identify the flavor that I was loving in this pile of tiny pearl shaped pasta. The pancetta was easy (it was listed on the menu) but I could not come up with that mystery ingredient. Finally I flagged down the waiter and he said he would ask the chef. Surenuf, it was tarragon. Both our plates had roasted golden beets, baby carrots (with green tops) standing up on the plate and mine had broccolini, which all really went well with the couscous.<\/p>\n<p>When I was buying the ingredients for this, I bought a container of tarragon, totally forgetting we had planted it this year. Well, maybe after the tarragon I bought withers and gets thrown away I can find a new use for what I have growing outside.<\/p>\n<p><a href=\"https:\/\/bluecrab.ca\">Blue Crab Restaurant <\/a>in Victoria was where we had both of these wonderful meals and what made it even better is that we were perched right on the water where we could watch all the ships and cute little water taxis come and go. So, another toast to our 45th anniversary.<\/p>\n<p>Some info on couscous. &nbsp;It was voted as the third-favorite dish of French people in 2011. It is known as a North African dish and is made from two different sizes of husked and crushed semolina and is normally cooked by steaming but can also be cooked in a liquid. &nbsp;You know when it is done when it is tender, not al dente and not mushy. &nbsp;The grains should be separate and taste moist, not wet or dry. So, now that you have that information, venture out and try this recipe.<\/p>\n<p><!--more-->This recipe is for the couscous part of my meal but I have included a Chili Citrus Butter Sauce that you can try if you add scallops and shrimp to this dish.<\/p>\n<p><span style=\"color: #800000;\"><strong>BLAST FROM THE PAST:<\/strong><\/span> <a href=\"http:\/\/rosemaryandthegoat.com\/2012\/07\/07\/grown-up-parmesan-fish-sticks\/\">Grown Up Fish Sticks<\/a>&nbsp;are so easy and yummy you need to put these on your list of must ttys.<\/p>\n<p>(*NOTE &#8212; confession &#8212; I mentioned that the next time I needed &nbsp;tarragon I would snip it from our pot outside. Well I did and I didn&#8217;t think it tasted much like tarragon. Now I know why &#8212; a few weeks later, it bloomed and it was snapdragons. &nbsp;I guess either me or my husband had replaced the sun scorched tarragon with a snapdragon plant. I thought the leaves looked just like tarragon. Oh well, at least I didn&#8217;t serve the snapdragon foliage to company.)<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4326.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16086\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4326-e1412722004163.jpg\" alt=\"DSC_4326\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Forgot the parsley in the picture so don&#8217;t forget to add it.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4328.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16087\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4328-e1412722095616.jpg\" alt=\"DSC_4328\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Saute the chopped pancetta and drain on paper towel.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4329.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16088\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4329-e1412722155491.jpg\" alt=\"DSC_4329\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Saute the onion in about 1 tablespoon of olive oil and 1 tablespoon of the pancetta fat.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4330.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16089\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4330-e1412722295367.jpg\" alt=\"DSC_4330\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>After saut\u00e9ing the onion, stir in the couscous and stir for about 3-4 minutes.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4333.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16090\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4333-e1412722371894.jpg\" alt=\"DSC_4333\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Stir in the broth, bring to a boil and then simmer 8-10 minutes.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4334.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16091\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4334-e1412722457910.jpg\" alt=\"DSC_4334\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Stir in the pancetta, parsley, tarragon, green peas and lemon juice; salt and pepper to taste. Add the thawed peas toward the end because if you don&#8217;t you will end up overcooking them like I did.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4336.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-16092\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/10\/DSC_4336-e1412722594194.jpg\" alt=\"DSC_4336\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>This is the citrus butter sauce that class=\"wprm-recipe-ingredient-name\">Kosher salt to taste<\/span>\n\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t<\/ul>\n\t\t<\/div>\n\t \t \t<\/div>\n\t\t\t<div class=\"wprm-recipe-instructions-container\">\n\t\t<h3 class=\"wprm-recipe-header\">Instructions<\/h3>\n\t\t\t\t<div class=\"wprm-recipe-instruction-group\">\n\t\t\t\t\t\t<ol class=\"wprm-recipe-instructions\">\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Saute the pancetta in a skillet until brown and crisp. Drain on paper towels and set aside.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Heat the olive oil and the pancetta fat in 2 quart saucepan or skillet over medium heat. Add the chopped onion and saut\u00e9 5-6 minutes. Add couscous and saute, stirring constantly, until well coated and aromatic, about 2-3 minutes.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Add broth, bring to a boil. Reduce heat to medium-low and simmer until just tender, about 10-12 minutes. Last few minutes stir in the lemon juice, parsley and the tarragon and the frozen green peas.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">(For the scallops and shrimp I simply salt and peppered and quickly saut\u00e9ed in skillet and they added them to the top of the couscous.)<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">For Citrus butter sauce: In one tablespoon of the butter saut\u00e9 the shallots until translucent being careful not to burn. \u00a0Quickly add in the lime juice, zest, chili powder and start adding the chilled butter and whisk just until barely melted.
