I&#8217;ve been hoarding it as I usually do when I find something I really like. They call this the &#8220;smash grind&#8221;&nbsp;mash grind and is made from aged filet, ribeye, new york strip, sirloin, and benton&#8217;s bacon. rich and smokey, and they say the best burger in the world which is served with homemade hoisin and comeback sauces.<\/p>\n<p>So the burgers were going to be easy to make and the guacamole I could make in my sleep. I had a gigantic sweet onion I had just bought so I gave him the option of <a href=\"http:\/\/rosemaryandthegoat.com\/2010\/08\/23\/thin-and-crispy-onion-rings\/\">onion rings<\/a>&nbsp;or saut\u00e9ed onions. Since he said saut\u00e9ed, I decided to roast the whole onion and add a few extra ingredients to make them even better.<\/p>\n<p>This was a huge onion and I would recommend using small onions to do this recipe. I had the &#8220;giant&#8221; so decided to use it since I knew we were not having a lot of other things on the menu and we both love onions.<\/p>\n<p><!--more--><\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1923.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14582\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1923-e1390246914314.jpg\" alt=\"DSC_1923\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>I had Swiss cheese on hand so that&#8217;s what I use; but mozzarella, Monterey Jack or even blue would be delicious also.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1926.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14583\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1926-e1390247004616.jpg\" alt=\"DSC_1926\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Put the onions cut side down and then pour the broth mixture over the onions. Add thyme to the dish.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1928.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14584\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1928-e1390247076352.jpg\" alt=\"DSC_1928\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Mix the cheese, breadcrumbs and one teaspoon of the thyme together for the topping.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1929.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14585\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1929-e1390247134491.jpg\" alt=\"DSC_1929\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Cook cover half way through cooking time then uncover and finish cooking. Remove cover and turn over onions.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1933.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14586\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1933-e1390247211152.jpg\" alt=\"DSC_1933\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Add topping and then bake until browned.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1935.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14587\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1935-e1390247270403.jpg\" alt=\"DSC_1935\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Drizzle with balsamic vinegar.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1937.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14588\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1937-e1390247342186.jpg\" alt=\"DSC_1937\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Remove from oven and drizzle with more balsamic vinegar.<\/p>\n<p><strong><span style=\"color: #800000;\">BLAST FROM THE PAST<\/span><\/strong>: Another onion recipe &#8212;<a href=\"http:\/\/rosemaryandthegoat.com\/2009\/06\/06\/5\/\"> Souffled Onion Soup&nbsp;<\/a>has a cheese souffl\u00e9 mixture on top of the soup and is a real treat. The souffl\u00e9 does not fall and I think that is because the heat and steam from the soup keeps it puffed up while you are eating. &nbsp;WARNING: It&#8217;s a rich soup so maybe a good salad is all spray. \u00a0Trim off \u00a0a little from the bottoms of each onion half and remove the peeling. \u00a0Arrange the halves, cut side down in baking 2 teaspoons thyme, and worchestershite sauce. Pour this mixture over the onions and cover with foil. Bake at 450\u00b0 for about 30 minutes.
