This year our Myer Lemon tree produced about 18 lemons or that&#8217;s what was left after squirrels or some other critter pulled some off, nibbled a little on the green, unripened lemons and left them before going on to destroy something else.<\/p>\n<p>I have to say, opening up a Bon Appetit magazine, that I did not order, and seeing this potato dish with PRESERVED LEMONS excited me. &nbsp;Ok, it&#8217;s just potatoes but now I can use my lemons. About the magazine &#8212; I was curious why I got the magazine as I haven&#8217;t taken this one for at least 15 years and didn&#8217;t want to be charged later for some type of renewal. Long story short is I ordered something at Christmas from a company that gave me a free year&#8217;s subscription. So, guess I will enjoy it until next year and maybe I will decide to renew it.<\/p>\n<p>The preserved lemons were so easy to make. If you find lemons on sale sometime try making a couple of jars. They are as simple as cutting in quarters, packing with salt, putting in jars and just keep pushing them down until they make juice. You may have to add a little juice to top off the jar but that&#8217;s it. Refrigerate them for a few weeks and they are ready to go. &nbsp;I have read to use them in risottos, salad dressings and salads; and I&#8217;m sure there are lots of other recipes out there using them. Oh, and you only use the rind when you get ready to put them in a dish, throw away the lemon pulp, seeds, etc and chop or sliver up the lemon rinds.<\/p>\n<p><!--more--><\/p>\n<p>I added some cipollini onions because I think they are so cute. And the &#8220;cute&#8221; factor always sells me on a vegetable.<\/p>\n<p>And the best thing of all about these lemons is that I beat the squirrels to them this year.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1831.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14506\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1831-e1389920993437.jpg\" alt=\"DSC_1831\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>I love those little cipollini onions.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1852.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14507\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1852-e1389921049533.jpg\" alt=\"DSC_1852\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>I cut my potatoes in advanced and covered with water to prevent them from turning brown.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1854.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14508\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1854-e1389921134891.jpg\" alt=\"DSC_1854\" width=\"500\" height=\"326\"\/><\/a><\/p>\n<p>I only bought a handful. I should have bought twice that amount. (I think the addition of garlic would be great in this recipe.)<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1856.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14509\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1856-e1389921231131.jpg\" alt=\"DSC_1856\" width=\"500\" height=\"400\"\/><\/a><\/p>\n<p>You want to pull out the lemon flesh from the inside and only use the rind.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1860.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14510\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1860-e1389921304941.jpg\" alt=\"DSC_1860\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Roast until almost brown and then add in the slivered lemon peel. The recipe says to do it after removing from the oven but I wanted the peel to get warm and mix better with the potatoes.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1861.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-14511\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2014\/01\/DSC_1861-e1389921389360.jpg\" alt=\"DSC_1861\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Delicious. Toss potatoes, onions, oil and rosemary on a large rimmed baking sheet; season with salt and pepper. \u00a0Roast, tossing halfway through, until soft and golden brown, 25-30 minutes. Toss warm potatoes with preserved lemon peel or add in the lemon the last 5-6 minutes. ( I added the lemon for the last 6-7 minutes of cooking time.)<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t<\/ol>\n\t\t<\/div>\n\t\t\t<\/div>\n\t\t\t\t<div class=\"wprm-recipe-notes-container\">\n\t\t<h3 class=\"wprm-recipe-header\">Recipe Notes<\/h3>\n\t\t<p>*Notes from BA was to replace half the potatoes with pieces of chopped carrots and toss \u00a0with melted butter and Aleppo pepper. Another way was to sprinkle fresh or dried oregano over potatoes before roasting and them top with feta to serve. These sound interesting to me also.
