I only bought two because I wanted to make these vegetarian stuffed mushrooms for dinner that night. I can&#8217;t believe that word came out of my mouth &#8212; v-e-g-e-t-a-r-iannnnn; that I am not, but occasionally I do like to try and eat only vegetables for a meal.<\/p>\n<p>I loved the size of these portobellos. They were not too big, not too small, but just right for a single serving side dish and if you want it as a meal, just buy larger mushrooms and make more stuffing.<\/p>\n<p>There are so many ways of doing portabellas and I&#8217;ve only scratched the surface of some ways I want to prepare them. Giada on one of her shows did a grilled portobello mushroom and filled it with a tomato and mozzarella salad; kind of like a caprese salad in a mushroom cap and that sounds so good to me.A sausage and onion stuffing would be wonderful if you wanted to add some meat to your mushroom.<\/p>\n<p><!--more--><\/p>\n<p>These mushrooms are low carb, vegetarian, and probably paleo, what more could you ask for if you are trying to cut calories.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0659.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13882\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0659-e1378663852360.jpg\" alt=\"DSC_0659\" width=\"500\" height=\"382\"\/><\/a><\/p>\n<p>I roasted the red pepper on my stove top and the zucchini I used were connected to my squash blossoms. Zucchini or any type of squash can be used.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0660.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13883\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0660-e1378663958859.jpg\" alt=\"DSC_0660\" width=\"500\" height=\"339\"\/><\/a><\/p>\n<p>Tiny little squash but you can use any type.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0663.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13884\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0663-e1378664066204.jpg\" alt=\"DSC_0663\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Everything chopped and ready to hit the skillet.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0665.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13885\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0665-e1378664126352.jpg\" alt=\"DSC_0665\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Saute the onion and then add in the garlic.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0669.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13886\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0669-e1378664186757.jpg\" alt=\"DSC_0669\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Add in the bok choy, tomatoes and then the zucchini.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0671.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13887\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0671-e1378664267367.jpg\" alt=\"DSC_0671\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>After you have sauteed all the ingredients, remove from skillet and put in a bowl to cool. Then stir in the mozzarella cheese.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_06731.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13888\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_06731-e1378664333980.jpg\" alt=\"DSC_0673\" width=\"500\" height=\"524\"\/><\/a><\/p>\n<p>Stuff the mixture into portobello mushroom that you have oiled.<\/p>\n<p><a href=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0674.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13889\" src=\"http:\/\/rosemaryandthegoat.com\/wp-content\/uploads\/2013\/09\/DSC_0674-e1378664400539.jpg\" alt=\"DSC_0674\" width=\"500\" height=\"335\"\/><\/a><\/p>\n<p>Top with parmesan cheese. If you want to add some panko bread crumbs to the topping, mix the crumbs with the cheese then top mushrooms with mixture.<\/p>\n<p><a oil.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">In two tablespoon of olive oil, saute the onion for about 3-4 minutes. Stir in the crushed garlic, 1 cup bok choy, sun-dried tomatoes and zucchini, saut\u00e9 until vegetables are almost done. 5-6 minutes. Add in the roasted bell pepper and then take off the heat until it has cooled.
