Summer Coleslaw with Apples and Peanuts

Ingredients

  • Salad mix:
  • 1/2 small cabbage finely shredded (or chopped)
  • 1/2 c. shredded cabbage
  • 1 green apple julienned
  • 3-4 green onions sliced thin
  • 2-3 Tbsp. chopped cilantro
  • 2-3 Tbsp. chopped parsley
  • Candied Peanuts make or buy
  • 1/2 c. cheddar cheese optional
  • Dressing:
  • 1/4 c. sour cream
  • 2 Tbsp. Duke's Mayonnaise
  • 2 Tbsp. orange marmalade
  • 1 Tbsp. apple cider vinegar
  • 1/2 tsp. Crystal hot sauce
  • 1 Tbsp. honey
  • salt and pepper to taste.
  • Candied Peanuts
  • 1/4 c. sugar
  • 1 Tbsp. water
  • 1/2 c. peanuts

Instructions

  1. Mix all dressing ingredients together and refrigerate until ready to dress salad.
  2. For the coleslaw, shred the cabbage, carrots and apple in large bowl. Add in the green onions, parsley and cilantro. Add cheese if you are adding that ingredient. Right before serving toss with just enough dressing to lightly coat and add the chopped candied peanuts.
  3. If you are making the peanuts (I would suggest just buying candied peanuts) put the sugar and water in a pan and stir over medium high heat until the sugar has dissolved. Add in the peanuts and stir continuously until the sugar coats them and starts to crystalize. This will take about 6-8 minutes. Pour them out on a piece of foil and let cool then chop or leave whole.
