Tomato and Edamame Salad

Ingredients

  • 1 carton mixed color tomatoes
  • 1/2 pkg. radishes sliced thin
  • 1/2 pkg. frozen edamame thawed
  • Sea salt and freshly ground pepper
  • 1/2 c. loosely packed cilantro
  • 2 cloves garlic finely minced
  • pinch crushed red pepper
  • 2 Tbsp. olive oil or vegetable oil
  • 1 Tbsp. rice vinegar

Instructions

  1. Wash and dry the tomatoes and cut in half. Thaw the edamame and cook in microwave for 2 minutes, remove and put in ice water to stop cooking. Slice the radishes very thin and then mix the tomatoes, edamame and radishes together.
  2. For the dressing mix the olive oil and rice vinegar together. Add in the salt and pepper, garlic and red chili flakes. Pour this over the salad and toss to mix. Sprinkle in the cilantro and toss just to mix.
  3. Enjoy!
