Preheat oven to 425 °

In a mixing bowl, mix the cornmeal, flour, baking powder, and salt. In a second bowl mix together the milk, eggs, butter, mayonnaise, and honey. Stir the liquid ingredients into the dry ingredients and stir until just blended and stir in the minced jalapeños and the corn kernels.

Grease pan of your choice. Fill about 1/2 way full.

Muffins will take 15 minutes to bake, a 9" iron skillet may take 20-25 minutes to bake. Test doneness with toothpick or just bake until golden brown.

Lime Butter

1/2 c. butter, softened

zest from one lime

1 Tbsp. honey, optional if you want more honey taste to your cornbread

Mix up the butter and the lime zest and set aside until you are ready to serve the cornbread.
