How much easier can a recipe get?
Isn’t everyone looking for easy, fast recipes that give them a little more time with their families; and it’s Christmas eve and who has time to cook now or even wants to cook days after Christmas. All we want to do is still down and relax and enjoy the holidays with our families and friends.

Whether it’s a nice piece of fish and some vegetables or potatoes or all vegetables. You will love how quick this is to throw together. Some great combinations to consider when you are wanting to make a sheet pan dinner are chicken breast and some broccoli and onions(coat your chicken with either Panko or parmesan cheese, chicken with some nice squash/zucchini, salmon with baby bok choy, maybe even some pork chops with potatoes, carrots, and apples.
If you are making chicken, why not top the breast with a little pasta sauce and mozzarella and then add some vegetables around the chicken. Try encrusting your salmon with some parmesan cheese and add some broccoli and asparagus to the sheet pan. Once you try doing a whole dinner on a sheet pan you will be sold on the idea for a quick, easy, no mess meal. I want to try a stir-fry sort of meal with some shrimp, broccoli, onions, carrots and throw in some water chestnuts and maybe a little fish sauce and soy for spicing it up. I recently saw one recipe where the chicken was covered with chimichurri sauce and on the sheet pan with some potatoes and onions.
My head is spinning from finding so many food combinations to cook on that pan that is usually saved for baking cookies. The sky’s the limit as far as what you can put on it. I have about 5 sheet pans two of which are saved just for greasy kinds of food so my cookie baking pans don’t turn dark. One of those dark pans is what is holding my Italian sausage, eggplant, zucchini, onion and red pepper. I found some seasoning that I sprinkled over it then I handed it to my husband to bake in our outdoor kitchen.
Don’t know about you, but I love Italian sausage; the fennel is what I love most. What I wanted to do was a hot and a sweet Italian sausage but could only find the hot while I did my shopping. My daughter-in-law, Missy introduced me to these Athenian Herb Dryglaze Grilling Roasting Spices. The spice packets come in several flavors; if you find them in your local store, give them a try.

Whatever you have, throw it on one sheet pan and save yourself a lot of time on clean-up.
Cover your sheet pan with heavy duty aluminum foil and start adding your vegetables.
I left the skin on the eggplant and cut the sausages up into about 1 1/2″ pieces. Leave the mushrooms whole. Also, I drizzled the olive oil and seasoning over the vegetables after putting on the sheet pan. I think it would be better to put everything in a large bowl and toss with the olive oil. I think it will give you a better coating and add the seasoning at that time also.
If you don’t want to heat up your house, put the sheet pan on the gas grill at about 400° or bake in your oven at same temperature until brown and caramelized.
Doesn’t that look delicious.
I add a caesar salad (I had dressing left over from my grilled chicken caesar) and that was enough along with a plate full of vegetables and a little sausage.
- 1 lb. hot Italian Sausage, cut in 1" pieces
- 1 eggplant , cut in 1" cubes
- 1 zucchini, cut into 3/4" slices or sticks
- 1 large onion cut into small wedges (it will fall apart and make strips)
- 1 red bell pepper
- 2 Tbsp. olive oil
