Ruby Tea Biscuits and our 40th (Ruby) Anniversary

What do Ruby tea biscuits have to do with our anniversary? Well, Ruby is the symbol of the 40th wedding anniversary and that is what we celebrated over the weekend (actual anniversary on 16th).

We met when we were around 15 and I don’t remember where.  I do remember going to a baseball game and him throwing a ball over the fence to me. I remember sitting in the bleachers at a football game that he was quarterbacking, waiting for the game to be over so we could go “ride the loop” around town for a few hours.

One story I have to tell about our honeymoon is funny now that we have experienced hurricanes here in Texas. We were married on August 16, 1969. Seems like there wasn’t a lot of coverage about hurricane Camille that was coming towards Florida. We were headed to Panama City Beach for our honeymoon. We spent the first night in Memphis and ended up spending a second night in Mobile, Alabama because we had heard a hurricane was coming. We thought it was kind of strange that in our drive towards Panama City Beach that we were about the ONLY car going south and there was a steady stream of cars going North. Oh, they were fleeing the approaching storm. Boy how crazy were we? Anyway, we got there safely and the hurricane came in at Mississippi and PCB only got lots of wind. I guess the hurricane is why a lot of our pictures are just us on the beach. 🙂

There are lots of memories when you have been with someone for 46 years.

Didn’t we have great music back then? Seems like all those songs are so appropriate for our courtship (boy that sounds old timey). The music is still around just like our marriage.

Our kids all came in for the weekend with their spouses. They did all the planning, food prep and cooking for our party. The food was all great and I promise we will be posting some of the recipes from the party and for anyone that was there, if you have a request for a certain recipe, just ask and we will post.

This is the menu that they (and they let me help a little) prepared for the party:

Crab and Corn Fritters

Pepperoni Stuffed Mushrooms

Asparagus and Bacon Kebabs

Proscuitto and Gruyere Palmiers

Pulled Pork on Mini Buns with Pickled Red Onions and Tarragon Mustard

Shrimp Ceviche Cups with Chips

Seared Tuna on WontonChip with Guacamole, Black Sesame Seeds and Sweet Soy Drizzle

Flank Steak and Pineapple Kebabs

Chorizo Sausage and Grilled Peach Kebabs

Chocolate Banana Bread Pudding with Homemade Vanilla Bean Ice Cream

Tea Vodka Cocktail

Margarita Machine (going for two days)

Wine/Beer

 

I made these Ruby Tea Biscuits for Brunch on Sunday along with some mimosas.  These freeze beautifully. (before baking)

 Cut in shapes and using a smaller cutter of the same size, cut out center. Discard that part and set the cut-out biscuit on top of the solid shape.

Put these about an inch apart. Brush with egg wash

Ruby Tea Biscuits

2 C. all purpose flour

2 Tbsp. sugar

4 tsp. baking powder

1/2 tsp. salt

1/2 c. shortening

3/4 c. milk

2 Tbsp. raspberry or red currant jam or jelly

Preheat oven to 425°.  In a large bowl, combine the flour, sugar, baking powder and salt.  Mix well with a fork.  With a pastry blender, cut in shortening.  Add the milk and mix with a fork until the dough forms a soft ball. 

Turn dough out on floured surface and knead 12 times.  Roll to 1/4″ thickness. With a 1 1/2-2″ heart or round cookie cutter, cut out the biscuits.  Lift half the hearts/circles and put on ungreased baking sheet 1″ apart. Using a smaller cutter of the same shape, cut out the center of remaining biscuits to make hearts/circles.  Lift off the shapes and place the cut out biscuits on top of the ones you have already put on the cookie sheet.

Carefully fill center with 1/2 tsp. of the jam/jelly. Make an egg wash using1 egg yolk and 2 Tbsp. water and brush over top edge of biscuit. Bake for 12-15 minutes. Now sit down, put your legs up and enjoy with a cup of tea.
